Malec is absolutely endgame on the show, no one is trying to deny that. However, the idea that you can only ship canon couples is so weird to me. (Like, just look at huge slash pairings like Kirk/Spock, Sherlock/Watson or Steve/Bucky... they're not canon, but that doesn't stop fans from shipping them.)
