Eggless Banana Cupcakes.
Cupcake without egg / Cupcake without Milk / Cupcake without Butter.
These SIMPLE VEGAN BANANA CUPCAKES are super moist and easy to make. They are perfect for breakfast, afternoon tea or any time of the day.
Makes 12 cupcakes.

✅ Ingredients:
1 1/2 (175 g) Very Ripe Bananas, peeled
1/2 cup (100 g) Superfine (granulated) Sugar
1/2 cup (120 ml) Water, room temperature
1/3 cup (75 ml) Vegetable Oil
1 3/4 cup (245 g) All-Purpose Flour
1 1/2 tsp (6 g) Baking Powder
1/2 tsp (3 g) Baking Soda
1/4 tsp (2 g) Salt
1/2 tsp (2 g) Cinnamon Powder
* It is very important to PREHEAT the oven. Bake when oven reaches the right temperature.
* All oven are not the same. Please adjust cooking time accordingly. If toothpick inserted in middle of cake comes out clean, cake is done.
* Mix dry ingredients and wet ingredients until JUST combined and dry flour is no longer visible. Do not overmix the batter or the cake will be dense.

Thanks for sharing the recipe, my muffins came out perfectly..I just made a little bit adjustment on the sugar I lessen it and used 1/4 cup..It's sweet but not too sweet and my husband loves it..he said its perfect

How long is the shelf life?
@Mary Martha. It can last up to 2 days maximum at room temperature (But, this also depends on the temperature and humidity at your place). In an air-tight container in the fridge, it can last for a week. Thank You.

If i am using banana essence, how many tspn/tbspn should I use?

Are you planning to use banana essence only and no banana at all?
I recommend using banana for this recipe because skipping banana will change the texture of the cupcakes. They will not turn out good.

I don't have super fine sugar all I have is white granulated sugar to use is that okay?

I like your recipes for banana muffins or cupcakes. Do you have a recipe for banana cookies? All I have available to make banana cookies is exactly one over ripe banana, honey, all purpose flour, eggs, vanilla extract, and vegetable oil. I might have half or whole stick of butter. Is it possible to make cookies using only those ingredients? Can you please share such recipe if you have one?
