If people have a hard time finding the folded egg a slice of drained & pressed tofu marinated in turmeric, black salt and water works pretty well as an egg replacement. I learned from watching cooking with Joey. 😊
If you like a darker, more crackly crust on your bagels (if you’ve ever had a fresh NY bagel, that’s what I’m talking about here), add some baking soda & regular molasses (or barley malt syrup I think it’s called) to your boiling water. Ratios vary by recipe, but it’s around 1/4C baking soda & 1T molasses for a double-handled pot. Not absolutely necessary, but it’s a low effort flavor boost.

That will help with browning and also give the outside those little crusty blisters that you see on the outside of the bagel shop bagel in your video. In my opinion, that's what separates a good bagel from a great bagel. Give it a shot the next time you make them!
Okay so I made the bagels! Freaking brilliant! I tried the sausage recipe from the McMuffin recipe you provided as well. Definitely super happy with the results. Folks, instant yeast is NOT a requirement! It came out fantastic with both bread yeasts! Truly surprised, but now I have 13 (was 16)bagels that the wife and kiddo seem to enjoy! Give this recipe a shot. It is SUPER EASY. These are literally idiot proof.
I've ordered a bunch of those from Peet's out of convenience, but I agree with the gripes. I've never attempted to make bagels but those look so dang good I might just give this a try soon!

I make my egg mcmuffins with grocery-store whole-wheat English muffins $1.69 for 6, at Meijer, pan-fried tofu slabs, and Morningstar Farms frozen spicy vegan breakfast sausage patties. I put fennel seeds into a cheap ($1) empty Aldi black pepper container with a grinder lid, so I can grind the fennel seed onto the sausage patties. Delicious breakfast sammie!!!!!!
I like that you take a big bite at the end…the sandwich looks scrumptious and the bagels look doable and delicious. Have you ever tried a hash brown or tater tots in your breakfast sandwich, ‘cause that’s a winner!😉👍

All 3 flavors, the regular, the spicy, and the maple, are vegan now. The brand still hasn't gone 100% vegan, but they promise they will.
