I’ve done this over the years for scratch cakes as they can sometimes be a little dry, but your recipe for the doctored mix cakes is so moist as is! Between the sour cream, wrapping and freezing, and the simple syrup if somebody is complaining then they must be off their rocker 😅
She should turn her oven a little lower. Temps the creates domes on cakes are cause by oven temperature being toooo 😮hot Lower your temperature and allow your cakes to bake longer you will be rid of your domes

Good morning hope all is well.. I have a question..I did this technique and wrapped the cake when warm(cooled for 10min) and froze right away but the next day when it thawed it was soggy straight through in the middle? Any insights?
@@KarolynsKakes no I didn’t. I only used one cookie sheet as well because it’s bigger(2 won’t fit) so I put the 2 cups of water on that? Would that be an issue..too much water in one spot?
It works in regular ovens. I actually don't use the convection fan when I'm baking these cakes. (Sometimes you see it moving as it's re-heating, but it doesn't stay on while baking.)
I wrap them still steaming hot and freeze them. I really like baking them with a wet wrap but it’s so time consuming. Sometimes I skip that but this seems like it might do the same thing!
Yes! I only add the towel strips on cakes 10" and larger. But with this method, I don't find it necessary. I tried wrapping a 10" cake with wet towel strips AND steam baking and it took too long for the cakes to bake.
It was really hot out of my faucet! The sheets are really hot, so I feel like it's going to happen either way. You absolutely can boil water and pour it into the pans, just be super careful!
I frequently ice my cakes on Sunday and have them in the refrigerator all week (Monday - Saturday) while I'm decorating them. My cakes are in the fridge for about a week and I never get any complaints about the freshness. If your cake is moist, it will stay moist!
@KarolynsKakes thank you so much I have to try making a 2 tier engagement cake during the week of the 4th for the 6th and wanted to makes the cakes on Tuesday, so that should work out good. There's no fruit in filling.

My friend bakes with the steam at 325. I prefer 350. I think it's a trial and error process to find what works best for you!

Karolyn you can also cover your cakes with foil. This will steam the cakes and keep them level.. Just takes an extra 10 min to bake

I like to try new things every now and then! My old technique still works as well. I'm just liking this method as of late!
My grandmother taught me this many decades ago. She always put a pan of water in oven when she made pound cakes.

It's not necessary, but I still spray like 2-3 sprays just because I like simple syrup!

Oh no! Sounds like it wasn't completely baked. Did you add a flower nail in the center? That helps it bake from the middle.

I still spray a tiny amount (like 2-3 sprays) just because I love simple syrup! But, it's not necessary because the cakes are really moist.

Hi why not put hot water when you refill the baking sheets so it doesn't warp them and cool the oven
