I tried cooking this dish today. It was yum but…. It didn’t look like yours. LOL. Mine seems very oily and watery. Not sure is it the natural oily-ness from the chicken? I used only wings cos that’s what I had in the fridge. And I think I added too much water and didn’t dare to add any more slurry than what you’ve mentioned.
LOL. Maybe you used too much oil when frying. If there is too much water, you can boil it off, with the lid off, at the end of the cooking process. I always add a little slurry at a time. And add more if it is not thick enough. Hope these help :)

I also think it is one way to stop food waste.

I cooked this today, followed the recipe mostly. Just replaced oyster sauce, sugar and Chinese wine with honey and rice vinegar.

Try a little sherry or white wine. Or you can leave it out of the recipe as it is not a key ingredient.

I always use a wooden spoon in my pans or pots - not to scratch them.

Quite the opposite, more are waking up to fake science and like skin on for collagen
