Carving Gouges (NOT Chisels or Knives) may be sharpened on the end for a push cut OR may be used for a slicing cut (like a knife) by the way it approaches the wood, moving the blade sideways as it cuts, as well as forwards. If you have a Skew Gouge then this is Precisely for slicing (like a knife) cuts. Carpenters have Gouges as well as Chisels. These can be either "In-Canel" or "Out-Canel" sharpened and are totally different in purpose and shape from Carving Gouges; or Turning Gouges which are different again as the Turning Gouge rides the wood on its bevel. A Carving Gouge that looks Flat is NOT flat, it just has a Very Large radius to the cross-section. If it were flat it would leave marks along the wood from the edges when a carver was trying to smooth a Field. A Carpenter does exactly the same thing, for the same reason, with a Smoothiing Plane blade which is sharpened with a large radius and NOT straight across like a Jack plane. How can you, "preserve and promote the beauty of these traditional products" when you know SO LITTLE of the basics of any profession's tools and how they are tuned and sharpened. Then you disrespect your viewers by Failing to put accurate translations in subtitles, of what the craftsman is saying. How can we learn anything when you are so deficient?
Aside from the attempt at deception in the title.. this was quite interesting .. It would have been just as interesting if a more appropriate and honest title was posted with the video.
@@CinePote Yes. A chisel is more efficient with a pressure cut rather than a slicing cut because of the physics of force/unit area, but it certainly does both. It's also better than a conventional knife blade at leverage cuts for removing waste.

Carpenters have "Registered Lock Chisels" or "Mortise Chisels" and these are the only ones designed to do the levering of waste as well as cutting. They are different from all other Carving, Carpenters', or Turners Tools.
Good stuff, but for once, any western church, or at least any big catholic mainland European church has far better woodcarving than this... Tryptics, pulpits, you name it.

Sorry, but a chisel IS a short shaped knife used with the hands, hammers, or with a lathe.

Wholeheartedly agree with you, instead of a elongated cutting blade, a short one is used in a chisel or planner, many ways to skin a cat
