Great project! Maybe one more variable to add to the project would be tension control. I.e. how tight the wool is being let off the spool. Would change how tightly knit the stitches would be depending on the material used. Definitely varies from material to material.
He could also use more hooks, that would be helpful for lighter yarns. It would make the fabric much denser. Also, machines are not great for making socks because of the heel flap and gussets. Its just not easy to make machines that are capable of flat knitting.

Because you have to knit a row, then purl, then knit, then purl. And needles have to be inserted into loops from opposite directions. That is if you want the stockinette stitch
