Lemon Brownies

Ingredients
1/4 lb (113g) softened unsalted butter
1 cup granulated sugar
2 eggs at room temperature
zest of a large lemon or 2 small lemons
1/4 cup lemon juice
1/2 teaspoon baking soda
1 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon vanilla extract
For the Glaze:
4 oz (113g) soft cream cheese
1 and 1/2-2 cups confectioner's sugar
2-3 tablespoons lemon juice
1 teaspoon lemon zest
Instructions
Preheat the oven to 350 °F, 180 °C.
Line an 8 by 8-inch baking pan with parchment paper and lightly grease with butter.
In a bowl combine the flour with the lemon zest and salt and whisk together.
Beat the butter, sugar, and vanilla extract until fluffy.
Add the eggs one at a time until incorporated.
Add the lemon juice and baking soda and beat until incorporated. The mixture will curdle.
Add the flour mixture in a few batches while beating on low speed.
Spread the batter into the prepared pan.
Bake on the center rack for 25-27 minutes. There should no longer be a ripple in the center. The brownies should be set but very moist. Do not over-bake or they will not be fudgy.
Cool completely.
Combine the glaze ingredients in a bowl and whisk together until smooth. If the glaze is a glue-like texture, add more confectioner's sugar (about a half cup) and whisk together.
Spread the icing over the brownie and serve.

🍋Dimitra, if you put the lemon zest in the sugar rather than the flour, the oils infuse into the sugar for a more lemony flavour.🍋

@@DimitrasDishes Just mix it between the sugar crystals, leave it for 20 to 30 minutes or longer for a great lemony flavour.

Aww, thanks so much!! This is a very easy dessert and so tasty too. The most important tip is to under-bake them just a bit. Chill them in the freezer overnight. It will keep them moist and will make it so easy to slice and they taw in minutes :) Enjoy!!
