- I traveled to Chicago Pizza & Oven Grinder Company to try their prized menu item from the source, the Pizza Pot Pie. This famous pizza creation took social media by storm over the past decade or so for good reason. The gooey, pizza-like creation is extremely photogenic sure, but it’s also wildly delicious. If you love a pot pie AND don’t mind it tasting like pizza, then this recipe is for you. I hope you dig it! 🤘🏼 Adam

Pizza Pot Pie Dough:
480g Bread Flour (4 cups)
288g Room-temperature Water (1 ¾ cup)
6g Salt (2 tsp)
5g Sugar (1 tsp)
5g Instant Yeast (2 tsp)
Olive Oil, as needed
To a mixing bowl stir together the water, salt, sugar and yeast. Add all the flour on top and mix by hand until a shaggy dough forms. Cover and let rest for 25 minutes.
Remove the dough from the bowl and knead on a clean work surface until relatively smooth, it’s okay if it’s not perfect. Transfer the dough to an oiled container, cover and refrigerate overnight or up to 3 days.
Pizza Pot Pie Sauce:
1 pound Hot or Mild Italian Sausage, ground
2 Garlic cloves, minced
1 Green Bell Pepper, diced
½ Yellow Onion, diced
28 ounce can Crushed Tomatoes
2 tsp Dried Oregano
½ tsp Red Chili Flake, more to taste
1 tsp Fish Sauce, more to taste
Black Pepper, to taste
Kosher Salt, to taste
To a large saucepan over high heat, add a drizzle of olive oil and all the Italian sausage with a pinch of salt. Break the sausage up with a wooden spoon and cook until browned.
Lower the heat to medium and add in the garlic, onion, green pepper and a pinch of salt. Cook until the veggies have released most of their water, about 5 minutes.
Add in the crushed tomatoes, oregano, chili flake, fish sauce, a few cracks of black pepper and small pinch of salt. Stir everything together then reduce the heat to low and simmer for 25 minutes, or until the sauce has thickened.
Allow the sauce to cool for 10-15 minutes.
To Build and Bake:
1 recipe for Pizza Pot Pie Dough (see above)
1 recipe for Pizza Pot Pie Sauce (see above)
½ pound Wisconsin Brick Cheese, sliced medium thick
3 Whole Cremini Mushrooms, stem removed
Melted Butter, as needed
Cooking Spray, as needed
Preheat the oven to 375F (190c) with the oven rack situated in the center.
Spray the inside of an oven-proof bowl with cooking spray. Lay in the slices of cheese, scoop in some sauce then press the uncooked mushrooms into the sauce.
Shape a piece of dough by hand into a disc about ½-⅓ inch thick lay it on the top of the bowl. Press the dough onto the bowl so it goes down 2-3 inches of the bowl.
Put the prepared pizza pot pie on a sheet tray then bake on the center rack for 20-25 minutes, or until the dough is just cooked through and still quite pale.
Remove the pizza pot pie from the oven and immediately brush it with melted butter. Allow the pizza to cool for 3-5 minutes.
Carefully, using heat-proof gloves, invert the pizza onto a plate, remove it by loosening the crust from the bowl with a spoon (see video) and reveal your gorgeously gooey creation. Feel free to eat this by hand, but it’s a good idea to reach for the fork and knife for this one.

20 years ago when I went to DePaul, I lived right in the apartments across the street from here.
Back then they had an old man who would seat you by your face, you gave him NO name or anything, he just remembered who came first by your face. It was pretty impressive.

As a Chicagoan living in AZ- I crave this often! So glad to see you recreate this, their Mediterranean bread is a sleeper though, a MUST have accompaniment!
oven grinders is honestly such a fantastic restaurant. The pizza bowl is good, but honestly having went there over 20 times I gotta say the sandwiches and mediterranean bread are what keep me going back once or twice a year.

In all the universe, there exists no hotter or molten an object than a fresh pizza pot pie out of the oven.
An object so scorching hot that the radiant heat has melted cutlery.
When I was at Illinois Tech in the late 70's, this was always the go to place to eat before heading over to the Park West for a great concert! Glad they've kept it just the same! Doorknob sized mushrooms was the only thing one could change, if not a fan. The salads were always great too. Thanks for the recipe, I'll hafta try this at home now! CP&OG just rocks.

You had a great opportunity staring you right in the face! I would fill those mushroom caps with some Ricotta, put a whole black olive stuffed with a jalapeño sliver in a bed of goat cheese into it leaving those flavor bombs lurking in the Pizza Pot Pie....but thats me.

One trick I learned from my dad when it comes to crumbling up ground meats in a pan is to use one of those wire potato mashers...it's like the quickest and most consistent way to make ground meat as chunky or as fine of crumbles as you want...

Best pizza I ever had Chicago pizza and grinder Co. Get the original..trust me. If I'm not mistaken, they simmer their sauce for 16 hrs. The mushrooms are the original style 😋

20 years ago you could walk right into this place even on weekends. now it's 2 hour waits. which means.... it's really good. btw the real star here is the mediterranean bread, it's a must.

Almost reminds me of the kitchen sink pizza from JJ's pizza shack from NW Indiana. If you get the chance to visit the Indiana part of greater Chicagoland id recommended stopping at a few of the locations. While not the most appealing name their Kitchen Sink pizzas are a great experience

Most grocery store deli’s have it. I have 2 Jewels near me. They both have it. Also, I think I saw it at my local Mexican grocery store. It’s a larger store, so they have almost everything.

I'ma guess any meat you would normally eat on a pizza. You could try sad sausage made from turkey.

I lived around the block from here about a decade ago. The food really isn't that good. It sounds amazing and all, but once you sit down and start eating it simply isn't that great. Recreating it in your house with quality ingredients and attention to flavor will take you a lot further for a lot cheaper.
