I am a farmer in the big city of philadelphia and i am always looking for delicious, easy ways to prepare foods from asia and africa especially. we have many immigrant families here from southern/southeastern asia, the carribean and west africa and i am trying to grow the foods from their lands to sell at our market. I also wnt to teach native born americans to appreciate these foods as they are also a part of our own forgotten histories. I believe it is vitally important to eat one's traditional foods and to learn to eat and cook the foods of other peoples. I now don't have to go to the indian restaurant to get bitter melon prepared because Madhura has showed me how to do it! I like the amount of oil you used, don't listen to those who told you to use less. i think fear of oil is a western phobia! people who eat good quality vegetable oils in moderation (that means not in every dish) and lead an active healthy life should not fear oil. besides, much of india is vegetarian and are not consuming the much worst animal fat in every meal they eat like in america. I'm diabetic and the Karela will help my blood sugars Tamarind (I remember before my diabetes it was beautifully bitter sweet) worried me but I looked it up and it seems some actually recommend its intake for diabetes. The Jaggery is the problem. If I leave that out, will the dish suffer badly or can I use a sugar substitute? Great video.

I like that you gave us the idea to use the bitter gourd water left after boiling and not throw it. Really good with less oil, I used less onions too.
