Nice work. I'm hungry all of a sudden. I don't know if you like smoked salmon but here is a good recipe. You get a slab of salmon, Costco is fine, wash it off and place in a long casserole pan. Sprinkle with Paul Purdhommes salmon seasoning or any other salmon seasoning that you wish. Then cover the salmon completely with a mixture of 1/8 to1/4 cup of Kosher salt, a half cup of brown sugar and a half cup of white sugar. Cover the pan with plastic wrap, and put in the fridge over night. In the morning you will find the fish quite stiff as the salt in the coating has riven a lot of moisture out of it. Gently wash the spices and sugar off of the casserole dish and the salmon, pat dry, brush on a thin layer of maple syrup, maybe honey if you prefer, and put in the fridge uncovered to dry thins out for a while. Pop in the smoker to 140 degrees and it will be done. I usually use apple or cherry wood as you please. Great tasting salmon. I now make several slabs as my friends really like it.

Done. Made it today and it was glorious AND EASY! I finished mine on my Weber with just a little lump charcoal. Delicious!
