When I play the Khuzaits, I just run as many khans guards as possible. In one of my late game runs, I can hold 404 troops in my party and there isn't really much that stops 400 khans guards, even armies of 1500 don't last. EDIT: I hate fighting the Stugians because the narrows maps couple with fantastic heavy infantry which ruin my khans guards and any khuzait army unfortunate enough to head north.

Dismount them, and have them act like Fian Champions. Shoot arrows till the sturgians are ~10 yards away into charge. Alternatively, repeated false retreats. Shoot arrows till sturgians are ~30 yards away, retreat ~50 yards, repeat. When out of arrows, dismount into charge.

Think I'm gonna do a khuzait playthrough this time... Doing Battania right now, great starting army, only recruit archers and use f2 + f3 for loose formation and f1 to place them within 170m from the enemy. Even if the enemy is 250 melee cavalry against your 100 fian champions, the fians win. EVEN with deadly cavalry mod
I think there is something wrong with cavalry at the moment. I was heavily outflanked due to a stupid mistake where I employed my defensive spear line on the wrong side and their cavalry just charged into my Fians unopposed, not a single loss. The Fians took a lot of the cavalry with two handers and eventually their cavalry ended up on the side where I did have my spears which meant the end. There seems to be a problem with couched lances, don´t think the AI is couching properly at all in the current patch and they fail to correct their approach when charging. The Khans can just swing wildly with their glaives and get their kills, the glaive benefits from speed but unlike the spear you can still kill with a glaive just fine on your horse without the help of speed. I always fear Khans because of the unpredictable reach and ability to kill me with a single wild swing, spear type polearms are somewhat far more predictable. On my horse I also fear two handers a lot more than spears, if I fail my charge and single swing can kill me ... while the spear (on foot) may stop my horse in its tracks I usually dont take a lot of damage and can just ride away. Some spears are also too long failing to connect with the horses at all. So, it´s cavalry and spear related problems.
Spear cav in bannelord usually groups to close toghether and gets in eachothers way when you tell them to charge, resulting in no spear hits in a charge (and then the cav that gets staggered gets killed as normal). If you see a single cav unit charging it usually hits its spear, its only when its a big group that they are useless
Ive got about 1100 hours in bannerlords so far. my first campaign was Khuzait. it was literally way too easy, so I dont play them anymore because like you said 100% heavy mounted/khans will decimate anything in the open field to the part where its no longer challenging or fun lol
