    A lovely recipe for one of my favorite dishes. Fish and chips is one of those combinations that just work together, han and eggs, macaroni and cheese, grilled cheese and tomato soup for instance.
    I disagree with you about the white pepper. It is, in my opinion, one of the most underrated spices, a category of food that is often underrated by sub par chefs generally.. Too often excuses are made for using white pepper, as you did in this video. Frankly, it does not matter to me if the coating of my beer battered fish is speckled. If black pepper would be a better choice, I don't care if the batter has polka dots. White pepper is the right choice for me because it generally has a more intense flavor than most black pepper. I think many miss using a wonderful spce because white pepper is treated as the poor cousin to black pepper.

    Fish has to have mushy peas, never tried a batter with yeast but will try it.

      The yeast will consume the starch from the flour in the batter and produce carbon dioxide in tiny bubbles throughout the batter. This makes the batter lighter and more crispy (and less starchy). You don't taste the yeast when it's cooked.
