    I don't use the "soap weed" yes I'm one of those unfortunates that cilantro tastes like soap, I use more garlic and Spanish onions...actually it depends on what's on hand when I I need a new bottle, the last one was serranos, habaneros and a Carolina from a friend with just a little honey from my neighbor... always fun watching you!

    My grandpa is from Chinese descent but his folks went to the West Indies before finally settling in Panamá. We're talking about turn of the 19th century. Colón is a mostly black town. So my grandpa was a true chombo in spirit! He used to make this delicious hot sauce he called labadee. Does anyone know the recipe? Only thing I remember is he used mustard and ají chombo. I'd give anything to have some of his hot sauce but he's been gone for quite a few years now 😢.

    My family makes a pepper sauce so fiery it corrodes the mason lid's jar, and turns it to dust. Don't go weak in the knees and start fainting around my family. They also use the sauce as a fainting potion at funerals because one whiff is so strong it will wake the dead.

      Ye, saw 2 American recipes with 5 cups of sugar... Idk what that is, but it's not pepper sauce. I'll try this one, but with more mustard.

    On Dover Beach they were trying to warn me about their pepper sauce being too hot 😂😂😂... i guess my American accent had them fooled... I had to educate them about our pikliz! 😏😏😏 lol

    is there any difference in taste between making it raw and cooking it like you said at the end?

      cooking seems to be more of a mellow taste and a bit milder.. Smooth too.

      Habanero is most similar but it will be different

    Interesting. I didn't think that a raw sauce like this could be preserved for so long. Sure, there's vinegar, but not that much.
    I usually cook my sauces and pour them into hot, sterilized jars. They last for over a year, almost like jam.
    I might have to give this a try now. Thanks! ;)

      my mom does the same (raw) and it lasts up to 6 + months.

      Sounds great! I like long term solutions.
      And I found your video at the right time, too. I halved and cored some hot peppers from my latest harvest just hours ago. And there is more. Now, instead of cooking my usual sauce or putting the peppers in the freezer, I might try this to "get rid" of them.

      don't put onions or any ingredients laden with water/liquid and you'll be fine

      Bajans put this pepper sauce on everything. It does not stay around for a year. It's gone long before it could spoil.

      Habanero and scotch bonnets are the same. They're called habanero peppers most places in the states.

      I am Bajan. Yes you can use pepper sauce in cooking and marinades, but I would test sparingly as the seeds bring heat. Taste as you go.

    In Barbados cilantro is not typically used in our pepper sauce and Turmeric is always used, poll the elderly folks please

    Why is called Bajan pepper sauce, when its the the same or very similar type of pepper sauce made in Guyana and Trinidad. Nothing against Bajans, love them.
