Bicol express is literally a rice thief dish! My mom’s from Bicol as well and this dish is everything! Savory, salty, spicy and packed with umami. So good!

Girl same. As a bikolana it hurt that he made his ‘bikol express’ Tagalog style. That tiiiiiiiny sili on top towards the end got me so bad. It’s like his mom taught him nothing. Obviously it looks good, but his version is more like a ginataang than anything.
Why did you eat the alamang straight of of the bottle 😂😂😂, its great with sour fruits but i do not recommend eating it straight. Eating it cooked with chillis and rice is great tho
Yup, still raw but it's safe for consumption. By cooking it together with the elements of bicol express, it naturalizes the flavour. We just cook it off seperately to either lessen the saltiness, modify the sweetness and the strenght of the chili spice. It goes great with mango! And if you want to have like a dipping sauce, try pairing it with crushed tomatoes (preferably with your hands) then mix it with the alamang.

I have a courage to try Buldak noodles which is really spicy for me but never have a gut to try Bicol express. I did once and I almost died lol
