I've used Gullon graham crackers (I think they have vegan and non vegan ones so you have to check the ingredients) and a local brand I found in Spain called Hacendado (the sugar free ones are vegan). @@brownble Thank you- I did end up finding some vegan graham at amazon that were also gluten free. I'm not gluten free but a friend visiting is and we loved this dish. Really delicious.
Hi there! They actually absorb a lot of the milk and get super soft once placed in the dish, but if you like a firmer cookie inside the dessert you can skip :) (they'll still get slightly softened just with the moisture of the mousse).

This looks great, but it doesn’t seem like the graham crackers absorb much of the milk. Is that step necessary?
