This is really interesting to watch as a fellow chef. As a chinese who has worked mainly in western kitchens I have long loved to prepare food "fusion" style by blending western elements in chinese dishes and vice versa. It is heartening to see more westerners embracing the asian food culture. Food brings people together very well and may there be more peace and harmony in 2025 and the years ahead. Ive been cooking since my parents had restaurants in the '70 and learned the European styles ranging from Escoffier to El bulli and various Asian cuisines like Cantonese, chiu chow and Japanese cuisine. I travelled in China as a celebirty chef 15 years ago. We are in a Diamond time of food era where we can explore all kinds of new foods, traditional techniques and future technology. Living now is amazing, foodwise..
My mom and grandma are from Shanxi, and yeah they didn't have much growing up. Your video made me think about the times my mom talked about her childhood as she made food from her hometown, and I cried lol (personal favorite is the knife-cut noodles, love the chewiness^^). However, it might be hard to believe for people( both native and foreigners) who are familiar with only marketed version of Indian cusinie. Indian cuisine utilizes vast variety of grains including millets and legumes for these preparations instead of only wheat or rice.
I was born in Taiyuan, Shanxi. I’ve been in the US for 7 years. Shanxi has always been a somewhat lowkey province in China. Because it’s not a tier one city or the most developed city in China. But Shanxi is one of the historical city in China. Its history dates back to 6000 years ago. People there are kind and nice. I miss my hometown every single day. Thank you for introducing my hometown to the world. The video quality is Netflix level. Appreciate for what you have done. ❤
My parents are from Taiyuan but I grew up in the US and even took Italian in high school. Perhaps I lived in a bubble, but I thought everybody in China ate rice. When I visited Taiyuan for the first time since I was a toddler I was shocked to learn that in the northern part of China nobody ate rice, only noodles. Thank you for making this video -- you gave me a glimpse into my heritage and why my parents like eating Italian food (especially pasta).
Noodles are only a staple in northwestern china. Hua bei (north/central) mostly eat buns that are similar to bread but steamed. Or we eat different types of naan. Only southern china eat rice.

I was just at a food conference in Harbin where a table of Chinese chefs and food scholars each expressed their admiration for Chris St. Cavish. Some knew him personally, some had just read his book, but everyone had something good to say--and this is a hard group to please. Forget the imitations, this man is the real deal.
I love the whole concept of this series, seeing different cultures come together to compare and share different ideas and traditions. I would like to see Chinese chefs go to Italy to experience the same thing.
I love the bit where the Chinese chef owner prefers to share and teach his skills. Which is the opposite to the “old ways” where these knowledge are kept secret especially to foreigners. The film Ip Man 4 was very telling of the old ways created friction among the Chinese people. Go and watch it if you have not seen the film. I think many of the Chinese ancient art and knowledge can be shared and improved upon.
love from a Beijing Italian food lover. I always think there are so many connections between Italian noodles and Chinese Noodles especially shanxi and shan'xi province. They even got same shapes and textures for various noodles. Like Orcheitte and Bucatini, u could easily found the same one in China! And the flavors are similar for many kinds of noodles as well!

Texture is so important to both cultures, I don't think us Anglos really understand or appreciate this. This video just reminds me of my hometown noodle. My father worked at Taiyuan Mianshi Dian for his whole life. I used to go there and eat noodles all the times. They have some amazing pastry as well, that’s my childhood memory. I only got to visit Xinghua Tang once, but I had probably the best noodle I’ve ever had in my life since left Shanxi. You can’t get those types of noodle anywhere else.

Thanks for helping us discover how the noodle tradition was never about a large variety of toppings before we got ingredients available year-round everywhere. I'm honestly disappointed with myself for not having had that curiosity before, but it makes perfect sense that there would be a great variety of shapes, techniques and composition when it comes to Chinese noodles. Of course it would rival the Italian tradition in preparation techniques alone and go even beyond with the diverse flour bases and composition. I'll be looking forward to seeing the next episode !

Texture is so important to both cultures, I don't think us Anglos really understand or appreciate this. Thank you to the veteran chef for explaining the historic and geographic context of the cuisine of Shanxi, this also gets lost in more commercial media productions which are produced by ppl who are looking for 'selling points' rather than showing the actual culture. Thank you so much!❤ By the way, Shanxi province's neighbor, Shaanxi province (they look similar but actually different) also has good noodles, with perhaps less kinds ifshape but more knids of sauce or cooking style.😊

This video just reminds me of my hometown noodle. My father worked at Taiyuan Mianshi Dian for his whole life. I used to go there and eat noodles all the times. They have some amazing pastry as well, that’s my childhood memory.
I only got to visit Xinghua Tang once, but I had probably the best noodle I’ve ever had in my life since left Shanxi. You can’t get those types of noodle anywhere else.

Thanks for helping us discover how the noodle tradition was never about a large variety of toppings before we got ingredients available year-round everywhere.
I'm honestly disappointed with myself for not having had that curiosity before, but it makes perfect sense that there would be a great variety of shapes, techniques and composition when it comes to Chinese noodles. Of course it would rival the Italian tradition in preparation techniques alone and go even beyond with the diverse flour bases and composition.
I'll be looking forward to seeing the next episode !

When the elder chef began, he introduced the concept of the 'handle of the knife' to illustrate how ordinary people share common experiences and sensations in cooking and tasting, both mentally and physically. Altogether, it is quite touching.
Incredible video! I’ve always wanted to see a production dedicated to sharing the culinary treasures in China…food is truly a way to bring different cultures together and it’s not hard to realize that after a simple conversation, we’re more similar that we thought and there’s really no need for any sense of “the other” or aggression
