I took three outstanding Italian chefs, all based in Asia, to China's most famous province for noodles to have a look and to learn.
In this three-part series, Riccardo La Perna (formerly of 8 1/2 Otto e Mezzo, Shanghai and Macau), Paolo Vitaletti (from Appia, Bangkok) and Marino D'Antonio (formerly of Giada Garden, Beijing) meet some of the noodle masters of Shanxi province.
In episode one, the chefs arrive to Taiyuan and immediately jump into the world of Shanxi noodles.

    There was a la mien restaurant near me several years ago. I remember absolutely loving it and ate there almost everyday on the commute home. Some time later, it closed but I still remember how amazing the noodles were. I hope to find another la mien restaurant soon. Thanks to Ma BaoZi for inventing this. And thank you for this great documentary.

    Always a real secrecy around these noodles. I remember a Chinese chef coming to Houston, TX in the 80's. Hand pulling noodles for an exhibition. Would not give out the secret of the alkaline water. Ive tried several times in my life to replicate them but the high gluten flour and alkaline water are the key to developing the dough

    Yes! Love this video. I always thought that pasta is basically noodle. And I don’t understand why Italians always have the fuss when people make a twist in cooking pasta. The Chinese, as we speak, the mother of all kind of noodles are very chill about it. As long as it is enjoyable, then you’re good to go!

    Very exciting video. There is a reason why Italy and Shanxi have many similarities in the field of pasta. Italian missionaries came to Shanxi in the 17th century. They brought tomatoes to Shanxi, including making tomato sauce and packaging it in glass bottles. This habit continues in Shanxi to this day.

    Excellent video!! One of the comments alluded to moving from north to south and bringing the food with them, another mentioned Huaian having crab roe dumplings; both are true. As a student of history I have learned that history strives to be objective and definitive but is often subjective and vague. History tells us that food and customs from the Northern Song Dynasty in Kaifeng moved to the Southern Song Dynasty in Hangzhou. Along the journey there must have been countless opportunities for the food and culture to be shared, adopted and changed in cities like Huaian, Nanjing and elsewhere. History also tells us that more popular places and people often get credit for things less popular places and people invented, so it makes sense that the xiaolongbao found its way from Kaifeng to Hangzhou to Shanghai and most people now associate it as a Shanghai snack. Similarly, Shanghai is known for having a Jewish community, but historically the original Jewish community in China was...Kaifeng. To throw in another wrinkle, my Shaanxi friend told me that their guantang xiaolongbao predates Kaifeng, who knows? I just subscribed and looking forward to more videos from you in the future.     Incredible work! It is funny that even though Italian and Chinese are both well-known noodle/pasta makers, they usually do that independently without knowing each other's work. But still, just like lots of things in mankind's history, the talents always get the same idea. See how many noodles/pastas were very similar in terms of production method, texture, and even appearance.
