How to make tortellini so good it will make you cry!

This beet infused hand made cheese tortellini is sure to impress just about anyone lucky enough to be in your household when you make it. While this dish can seem intimidating at first glance, I promise it can be done with a little extra effort. I break this homemade tortellini pasta dish down into a couple easy to follow steps that will help you elevate your skills in the kitchen to that next level!
BEET INFUSED PASTA RECIPE:
- Roast 1 beet in the oven @ 350 degrees ~ 20 minutes
puree in food processor
- 1 cup 00 flour
- 1/2 cup all-purpose flour
- 2 eggs
Make a well in the flour for the eggs and roasted beat puree to rest in as you begin to mix in the surrounding flour until everything is incorporated. Form into a ball and cover in plastic wrap and let sit for about 30 minutes.
