Just tell your niece "In cultures all around the world (including in the Hebrew bible) there are no separate words for 'soul' and 'breath.' If we accept that, then we have to conclude that all souls are actually one, a soul that encompasses the entire world. Animals, plants, fungi -- all forms of life are part of that one soul, ever-moving. Plants and animals trade souls, back and forth. They have for millions of years, and they will for five billion years more. When grandma passed away, the breath that she had been merely borrowing during her precious time with us returned to the world. Death is an illusion. Every atom that made up grandma's body still exists, they are just changing their form now. Returning to the earth that made the food which nourished her, and you, and me." Or some shit like that. At least you won't be lying to the kid.
