Commercial hainanese chicken is usually cut with the bones, but personally, i hate that. There’s so much bone fragments to work around because the cooking process softens the bones up. When i make this at home, i cut everything off the bone and then save the bones to make broth for noodles later on. The broth can last months in your freezer.
I think the idea of Asian way to cut chicken with the bone is that every piece you took will have the same amount of meat as everyone else, and the whole chicken could be present nearly on a dish for presentation purposes.
to be fair, asian use cleaver to cut chicken bone, perfect with no fragments if you make every cut clean and quick. It's hard to do, and tbh if you could do it, you're passing the qualification test :)
Ha ha some of the comments here.😮 My family visited Singapore and ate the 'bland boiled chicken' and it tasted heavenly yummy. One of the most tastiest dishes ever.
Singaporean here. One key ingredient you’re missing out is the garlic ginger paste which makes it so much better. Also we use dark soy sauce as well for condiments in addition to the chilli. Additionally, we also douse the chicken in sesame oil and light soy sauce mixture when serving. All in all good job!

I'm yearning for that ginger scallion sauce... I've made it at least 2x and it's fantastic here and with just about anything.. Scallions, fresh ginger, salt, and neutral oil.. 🤌❤️

I always love chicken with that deep brown and crispy skin with a lil bit of spice and tang over it, but this one looks promising. Besides, I never had Hainanese chicken, and can't wait to try one. It definitely looks mouth watering 🤤🤤🤤
The negative comments on dis one are from mfs who've never had a nice helping of haianese chicken rice. I didn't grow up on the stuff, only recently.found a place near my work that serves it. Sure the prep might make it look bland but it's so flavorful. I love how nicely the dish comes together, boil chicken w aromatics for a stock you use to make some awesome rice.

Try the thai version with fermented bean dipping sauce and the chicken broth with added daikon radish next time. Otherwise looks solid mate I'm gonna go make myself some now that I'm craving this dish
I’m Asian....Hiii~ I kind reminder....you need to buy and use another type of chicken....the one with yellow feathers....(I.e. after cooking it with have yellow lovely skin plus yellow fat under the skin....(which add another level of flavor)....ppl love enjoying the skin and jelly underneath it.....~ yum yum
