Some of those pitchers are starters, who are expected to be able to pitch multiple innings and get through the lineup a couple of times. The rest are relievers who usually only pitch 1 inning (if even) and a more of a "specialist". Because starters are throwing so many pitches in their starts, they can't pitch every day. In the regular season, teams usually have a 5-man rotation of starters, so pitchers like Gerrit Cole only pitch 1 out of every 5 games for the Yankees. Relievers rarely go more than 2 days in a row in the regular season. In the Postseason, teams tend to use only their best 3-4 starters, although a recent strategy has been to not use a starter at all and use only relievers the whole game to get a better match-up against the other team's hitters. There's a lot that goes into pitching decisions for the manager, but I hope this helps!

But there is what’s called a 7th inning stretch which gives more time between innings (there are 9 total of course) where folks can move around and take care of business before the end of game. PS- Pitchers only pitch every 5 days because they need rest in between starts. You won’t see Cole again for the Yankees until game 6. That’s why they have pitchers that are called relievers who come in after the starter to get to the end of the game.

well, when the ball is caught and there's 3 outs, than the innings over and no runs count. But if the ball was caught and there were still outs left, and if the ball was hit out far enough, the runners can run from their base after the ball was caught and try to beat the throw in from the outfield and advance to the next base or score, and then the scores do count. Its called "tagging up" and the dodgers did that last game to score some runs.
Garrett Cole isn’t there because once you pitch one game, you don’t come back for like another 4-5 games, if you pitch three games in a row, your arm would fall off
There is a bit of a "Halftime" it is known as the "Seventh inning stretch" It's a brief extension in the middle of the 7th inning. Time to go to the bathroom or get a snack, but it's not long like a halftime.
