  • One of my favorite go-to recipes. I will also show you how to make fettuccine without a pasta machine. Here's what you will need:
    3 cups of 00 pasta flour (if you can't find any 00 use all purpose flour)
    1 tbs olive oil
    4 egg yolks
    3 whole eggs
    1 bunch spinach or 5-6 cups baby spinach
    salted water with 1tsp baking soda
    3 garlic cloves (optional)

    I've been watching your videos and I wonder if you have like a list/video of what natural ingredients you use for each color you make? They're all so beautiful, bright and intense! I find it super interesting!!! And I'm really curious about it, do all of the ingredients modify the flavor of the pasta?

      Anything would really go with this flavorful pasta, but my favorite is pesto or even a Nice mushroom sauce sautéed with some garlic and Italian seasoning then finish it off with a dash of white wine, 2tbs cream and always Parmesan cheese.Enjoy

    Fiona, just want to warn about spinach, as it contains lots of oxalate (salt of oxalic acid or oxalic acid itself) together with other some vegetables, greens, legumes, nuts, seasonings etc. Oxalates are sort of glass shreds, glass crystals that can be very small (in nanometers), can penetrate into cell and kill mitochondria etc. The larger parts can be stored in any organs (brain, thyroid, vessels, nerves , joints etc) including kidneys where they form oxalate stones. Oxalates are plant chemical toxins in fact together with lectins etc . And can cause autoimmune diseases, allergies too. That is why carnivore diet (only meat diet or loose versions of it) works well for such people as you stop literally eat any vegetables greens and even fruits.
    There are no ferments in our body that degrade oxalic acid/oxalates except for oxalibacteria in our gut. But they are very susceptible to antibiotics. Of course there are people who can tolerate considerable amounts of oxalates in food. Anyway, if you are interested look for american Kelly N. Norton who destroyed her health with green smoothies, vegetables etc from her own garden, british nutritionist Elliot Overton,. Dr.Paul Salardino(not sure if spelled correctly), Dr.Chaffee etc who supports carnivore pure diet or looser versions like animal-based diet etc..
    I have myself gut and joints problems from infancy almost, when was given lots of antibiotics that killed my gut microbiome. Pluw after 10-15 years of bad (high carb in fact) dieting got crunchy body/joints, SIBO, bloating and very low energy etc..Have not eaten that big much high oxalate foods (vegetables, greens) as we live in northern part of the world. But noticed that very low carb diet especially carnivore diet do miracle to me. Anyway, decided to warn you. Peace!
