How to Make SPINACH PASTA DOUGH at Home

    How to Make SPINACH PASTA DOUGH at Home
    INGREDIENTS (for 3 people)
    150g/5.29oz baby spinach
    Sprinkle of salt
    250g/8.8oz 00 plain/all-purpose flour
    2 organic eggs
    METHOD:
    How to make the spinach:
    Spinach pasta needs an extra special ingredient - baby spinach! Place the leaves into a pan and put on the stove top at a medium heat.
    Sprinkle a pinch of salt into the pan and leave to cook, with the lid on, mixing it every so often with a wooden spoon.
    Switch off the stove and add the hot spinach to a food processor, blending it until it becomes a cream.
    How to make spinach pasta dough
    Pour 250g/8.8oz flour on a wooden bench, create a well, and add 2 eggs and one heaped tablespoon of your spinach cream.
    Whisk the eggs with the spinach (using a fork) and slowly mix the flour by pinching the sides in, then combine the rest.
    Once the spinach and egg have disappeared into the flour, use your hands to combine the rest of the flour and repeat the same motion to bring it all together, then knead the spinach pasta dough.
    If you are happy with the consistency (making sure it’s not sticky), and there is a lot of flour on the bench, just scrape it to the side, and keep kneading.
    When it is smooth and soft, create a ball of green pasta dough and wrap it tightly using a plastic wrap then leave to the side for 30 minutes.
    Once the time is up, sprinkle flour over your bench, unwrap the dough and dust some extra flour on top.
    How to roll out the green pasta with a rolling pin (or a bottle of wine!):
    Cut the spinach pasta dough ball in half (covering the other half so it doesn’t dry out) and use your rolling pin to stretch it out by rolling it forward and back, then turning it over and repeating until you have an even, thin pasta sheet.
    Try to create a large oval or square shape before folding it in half 4 times, sprinkling flour on top each time you fold it.
    Use your knife and cut your desired shapes, the best types to make this way are: green spaghetti, fettucine, tagliatelle or pappardelle - just adjust the thickness.
    Unravel and add extra flour so the strands don’t stick together.
    How to roll out the spinach pasta with a pasta machine:
    Cut the rest of the dough in half (using a quarter of the total) with a sharp knife.

    My niece and nephew were staying at my place tonight. They don’t like eating vegetables but they do love eating pasta. So I handmade it and told them it’s a brand new pasta. They actually love it and tell them that it’s a spinach pasta I made and they were surprised. They keep asking me to make this for them.

    I tried your recipe tonight with 00 flour, eggs and frozen spinach. You were right about the frozen spinach. They do the job perfectly. Best spinach pasta I have ever made, thanks to you! 👍🏻

      I want to use frozen spinach too. Did you squeeze all of the water out? My frozen spinach is super watery. Thx!

      @@MikiDoodleMom I cook the spinach in the microwave and then I squeeze most of the water before I put the spinach in the food processor. You shouldn’t worry about the excess water, though. You can always compensate with some more flour or semolina (unless, of course, there’s more water than spinach!). The only problem I experienced with frozen spinach is the presence of a few stiff fibres I would have discarded if I had used fresh spinach. Now, I strain the spinach pulp before I add it to the pasta mix. My best advice would be to experiment until you get the right proportions. Even the not-so-perfect pasta will be very good.

    Vincenzo thank you very much for the recipe i made them today with mushrooms and tomato salad and it was really great i had no noodle machine but even with knife/rolling pin it was no problem i have to make these noodles again 😊

    Va bene! I use semola/mixed with AP or bread flour and a combination of rolling/machine or sometimes a guitarra (which my sons always thought was funny because of the sound when it comes off the wires). I find the main thing is patience and love=success. And practice.

      at home friday evening is always pasta dinner, I usually cook marinara sauce with onions, garlic, 1 bell pepper, passata and extra stuff like thyme, rosemary and laurel... Don't know whether this a true italian recipe but it's still tasty :)

      I would do an onion cream sauce with a tiny little bit of Pecorino Romano. Slowly brown finely chopped onions and then add to a Mehlschwitze (flour in butter). Add one egg yolk. Add a little bit of pasta water and pecorino and then heavy cream. Pepper to taste, salt as needed. Stir but don't whip it and don't burn it. Around here pasta is never the star, but meat and dairy and eggs always are. particularly beef.

    Looks more then beautiful, this green colour makes it looks extra delicious! My question is what pasta is the better pasta. With eggs or with semolina and whats the difference in terms of taste? Thanks

      Thank you so muchwell the main difference is that in one there are eggs, and therefore it is heavier when you eat it. consequently the flavor also changes! have you ever tried egg pasta?

      @@vincenzosplate not really sure, I guess the noodles you can buy are without egg. I just orderd Semola from Caputo and I will make both kinds of noodles.

      One more question ;) Can I use 00 flour to use bread, the same flour I use for pizza or is a 0 flour the better choice? Caputo brand is good enough?

    Due to popular demand, I made a 14Lb leg of lamb for Mother's day today. It was my third leg of lamb this year and I finally perfected the cooking. 425F for 20 minutes and then 325F (Not 350) for 3 hours and 40 minutes in the middle of the oven. *Trust me, beautiful on the outside, tender, medium and pink on the inside.*

    The type of pasta depends on the type of sauce you serve it with. Keep in mind the regions of Italy and the recipe it comes from. Very nice recipe, Caio.

      @@vincenzosplate Even Better! Maybe a nice Bolognese also? What do you think? Or to much overload? I was trying to get creative with this but don't think a type of sauce with some truffle in it would go with the Spinach unless a Nice Truffle Alfredo? 🤔

    I have always used fresh spinach for my pasta, lots of it! Is it possible to use frozen spinach when fresh spinach is not available? I would never use canned spinach but I was wondering if frozen could be a second best option.

    How about a arugula pasta? With cacio e pepe? Would it be too peppery? What sauce do you think would work?

      seems like a great idea!
      But I would not recommend a cacio e pepe, you could try with vegetables, or with tuna 😋

      You can but its more fun to make it by hand especially this pasta. Ot is super easy to knead and manage by hand
