For those who have true Celiac disease, they need to stay away from gluten. Others who think, claim, feel, they have a sensitivity to gluten may find that this true Whole Wheat coupled with the Sourdough [natural leavening], can handle such a flour/bread. I fresh mill my own flour and it is a world of difference for me, but like everything YMMV as everyone reacts differently to many things.
Having lived in Massachusetts for a quarter of a century, I'm pleased to see this local stoneground mill. It turns out they actually mail whole wheat tortillas to where I live in Southern Indiana. So I just ordered some. They're pricey, but I'm sure they're delicious.

Sounds like you know nothing about what is removed in the roller mill process but are fine with attacking people who know better. There are approx 40 minerals and vitamins removed when the bran and germ are removed in the roller mill process. Your brilliant government insisted in the late 1940s that 4 of the 40 be returned even if synthetic. Then in the 1990s it was found the Folic acid removed in the roller mill process was contributing to birth defects and it was ordered to be replaced. If the oils from the germ are not removed, the flour will go rancid in very short order so even "Whole Wheat" flour sold in the grocery store does not contain the natural oils which would greatly shorten the shelf life. Typical RUclips know it all attacking those who know a hell of a lot more than you do. I'd much rather be a "Food Snob" than an ignorant person who exposed their ignorance on the web. No wonder you hide behind a bogus screen name.
I imagine it is expensive but twice the price for five times the nutrition sounds like a bargain to me. Good food should not be cost prohibitive. Crap food is making us sick.
