Hey I love these, I tried a practice run on Saturday to give as gifts to my daughter's teachers and they became sticky on the outside once they were in the gift box, still crunchy on the inside though. Do you have any advice for that problem? Thanks

I followed your recipe last weekend and for the very first time in my life the meringue roses that I made turned out PERFECT I’m blown away at how good they turned out. I made white, pink and peach coloured roses. The only problem that I had was the coloured ones had a slight bitter taste - I’m guessing it was the colouring. How can I avoid this. Also when should I put in any flavouring to the meringue. I’m thinking vanilla for white, strawberry or raspberry for rose and orange or peach for peach coloured meringues. Thank you

Lovely! Is there a way to do the same shape on the other side of the rosette so it won’t look flat on one side but look like a rose all around the straw? Or is there a way to make the rose you did on the royal wedding cake and bake it like that? I wanted to try to make a meringue bouquet! Do you have a video for that? Ty
You could make two hearts and attach the flat sides together using a bit of buttercream as glue and that way you'd having defined piping on both sides :)

Yes, absolutely! A small amount won't affect the consistency

Don't mix the coloring into the meringue if you want really intense colors. Instead, paint the inside of the piping bags. Then the color is only on the outside of the meringue, and it is very intense. This is a tip the Meringue Girls gave.

I made these and they turned out perfect. I put the pops and some little kisses on my daughter's birthday cake. I had extra pops and kisses and served them at the party, everyone (kids and adults) loved them. I made them almost a week beforehand and stored them air tight, they were still crunchy on the day, it was a little humid inside though so they started getting a little soggy fairly quickly. Also I tried using pasteurised boxed egg whites and it failed, the egg whites were really runny to begin with and it didn't get to the stiff peak stage, it just got thick. I ended up using real eggs and it worked a treat. I don't know what was wrong with the boxed egg whites.

Mine don't and I've tried several brands. The low baking temperature shouldn't burn or discolour the sticks
I Love meringue cookies and I am a extreme cake Artist ( sculpting, but Love it all )...I have NEVER seen Anyone make Meringue as a pop and sprinkles to boot...I just think this is brilliant! WOW...How much do you sell these for? I do not know about where you are, but I am North of Seattle and the prices are 3X higher than Before CV maybe more..So taking account the price hikes...What do you suggest? I love your videos..Even Old dogs can learn new tricks.. I am going to start up a cake business after all these years of cake competitions and such but I am thinking mini cakes and pops as a bread and butter income as well as mini cakes..What do you charge say for your cookie dough cake 6 in or 4 in round? That will give me a good idea of where to go with pricing.. Anyone, Please chime in and do tell and share your thoughts...Charge for Meringue pop your cookie dough cake..I appreciate it so much and I could listen to you all day! Thank you is never enough!
Hi! I don't sell any of my cakes or baking - I just create them for videos for my cake school and RUclips. I used to have a bakery and I did a lot of research on what competitors were charging before setting my own prices, taking into account my costs and what % profit I wanted to make. Hope that helps! You can definitely add flavours of you like! The flavour and smell is just of sugar :)
Does anyone know if you can make these ahead and freeze them? I have two parties a month apart and was considering making all decorations for the two cakes on the same day. Just don’t know if meringues do well freezing and then defrosting.
Yes! You can freeze meringues after baking them. Just put them in an airtight container like a tupperware. If you have several, it's best to separate them with a layer of parchment paper or baking paper to make sure they don't stick to each other. Good luck!

They need to be in an airtight container. You could try wrapping the pops in cellophane and tying a ribbon around the base, with the straw sticking out the bottom
What about those ovens which have both ups and downs, separate ups, separate downs(FUNCTION)
What kind of colouring did you add? Liquid or gel? Does it matter?
I used gel. Liquid will work but you won't be able to add much without affecting the consistency of the meringue. Gels are much more concentrated so with just a drop you can get really bright colours. Sorry I didn't explain that in the video!

If it's heatproof so can be baked and if it's non-stick then yes!
Could you add cream or tartar to stabilize the meringue?
Absolutely! I don't bother because I find that they hold their shape perfectly without it, but if you find that the texture of the piping tips isn't holding then cream of tartar would be useful

Nope! You can press the meringues into frosting on the sides or top of the cake while it’s still sticky

I put the pops on just before serving but if you want to put them on earlier you can keep the cake with the pops in a cake caddy (large tupperware for cakes) or a box with a lid

Do you know why my meringue cookies turned yellow? I baked them at 200F for 60 minutes
Oh no! You could try baking at a lower temperature for a bit longer - maybe your oven runs slightly hot so 175F for 70 or 80 minutes?

Absolutely!
Did you say to pipe on a straw ?
Yes! I use paper straws and they work really well - they're strong enough to support the weight of the meringues and they don't discolour in the oven, maybe because of the low baking temperature

You can substitute the egg whites with the liquid from a can of chickpeas, called aquafaba :)
I once.bought a.seperator....found it much easier...less to.wash too...to just use the shells...until i went to IRAQ...those poor.chicken eggs.shells were LIKE TISSUE PAPER..those.chickens obviously didnt have what they needed to make.eggs.
Idea alert...im.doing a.Frozen birthday party with out BUYING ANY OF.EVIL DISNEY PRODUCTS...gonna.try.to make snowflakes....wish me well..so.far pipecleaner snow flakes came.out horrible.
