Hello HYStory, when you open a storage policy, in the General Tab you see option 'Active'. Uncheck the box to disable that copy for use. Please check on various dependencies before disable or else you would face data aging issues.

Are you able to configure a source copy (1) to run to copy 2 (disk) and copy 3 (tape) at the same time?

Yes you can but setting all the copies as in-line copies. Once set all the copies run at the same time.
