    If you enjoy apple butter, you're gonna LOVE this. Easy small batch recipe. Great for holiday gift giving.
    4 lbs. Pears, peeled, cored and coarsely chopped
    1/3 cup apple cider
    2 Tbsp. bottled lemon juice
    2-1/2 cups dark brown sugar
    2 tsp. Sea salt or kosher salt
    Ladle hot fruit butter into hot half pint jelly jars, leaving 1/4" headspace. Wipe jar rim. Center lid and apply band to fingertip tight.
    Process pints 15 minutes in boiling water or steam canner, adjusting for altitude as follows:
    1,001-3,000 ft ~ increase processing time by 5 minutes
    3,001-6,000 ft ~ increase processing time by 10 minutes
    6,001-8,000 ft ~ increase processing time by 15 minutes
    8,001-10,000 ft ~ increase processing time by 20 minutes
    Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

    This stuff is amazing. I have canned this recipe now over 10 times. Every time I could get pears I have made a recipe. I now have them on my shelf to give out as gifts and enjoy for the rest of the year. This one is a definite try!

    I made this several weeks ago and finally popped open a jar! It smells nice and tastes delicious. We had it with sausages and biscuits. I also thought it would be great to mix some with German whole grain mustard and serve Brotworst….not a flavored one just the regular one.

    Made this today. Very sweet and tasted great with the extra 1/2 tsp of salt. I got exactly four half-pints.

    Btw, there is a tool to use to remove pear stems and cores. Very handy.

    Carol one more question: is the 4 pound pear weight after they’ve been peeled, cored, chopped?

    Lemon juice has a lot of pectin in it so it helps set the butter as there is no commercial pectin in the recipe :)

      No, lemon juice itself is very low in pectin

    looks delish.yes these would make wonderful gifts for the holidays...i normally leave my skins on my fruit when cooking it down in the crockpot..do you think you could leave the peels on the pears when cooking since we are going to blend it all up with the immersion blender anyhow?

    Hi Carol, Trying this right now. I doubled the recipe, followed it to the T, but it's not as dark as yours. I used dark sugar. Do I need to cook it longer ? It's been slow cooking for 4 1/2 hrs. Will this be a concern? It's ready to put in the jars. Sure taste Yummy😊 Hello again, the morning after. The butter processed fine but definitely not as thick or as dark as yours.
    They all sealed great. My cooker is a 8.5 quart, would that of had anything to do with anything? Will it thicken more as it sits? I'm fairly new at canning so I just want to make sure it is SAFE to eat. By the way, the apple butter turned out beautifully and tasted wonderful.😊

      It is safe as long as you processed correctly. The color could depend on a number of factors. It doesn’t have to look exactly like mine 😊

    Hi! I want to cook my pears with thecskin on and put them thru my food mill to make the sauce. Do you know how much sauce I need before I add the brown sugar and salt? Thanks!

      After I cook the pears I run them thru my food mill to make sauce...all the skins and core and seeds are removed! Just left with sauce!

      I don’t think cranberries would work well here and I wouldn’t know where to start to convert the recipe, I’m sorry

      ​​@@sunshinemee2570Cranberry Apple Butter is literally amazing and makes a beautiful gift any time of the year! I always buy a few extra bags of cranberries to keep in the freezer during Thanksgiving so I can make gifts. It is yummy on pancakes and waffles and vanilla ice cream ❤

    What would you use this on?
    We don't use a ton of apple butter. Besides using it on toast is there any other uses for it?

      Stirred into oatmeal, swirled into cheesecake, add to cake or muffin mix
