To explain...
People who are unfamiliar with Souls-like games complain that she's the hardest boss. She isn't, not even in this game. She's still tough, but much of it are... inconsistencies that make her difficult to fight.
There are a ton of strategies to fight her with, though, with varying levels of sweatiness. That's why he overlayed footage of someone spamming Rivers of Blood on her. Bleed is a VERY effective tool for like 95% of the bosses in the game... until you reach Radagon/Elden Beast (RadaBeast for short), who are both immune to status effects.
(un)Fun Fact: Max0r's Elden John is not fighting 'canon' Malenia, Blade of Miquela. He's fighting *Unalloyed Malenia* , the nightmare-spiked difficulty modded version of Malenia!

Why is nobody mentioning that almost every leonine misbegotten has a different legendary sword that they drop?

There is no possible lore reason that misbegotten got that sword except maybe he stole it. Any other reason is a lie by people trying to cope with bad writing and level design.
Consecrated Snowfield is probably the worst area in the game. Every enemy and boss in the area is a bloated reskin of a previous enemy; half the map is fucking blinded by a snow storm, and completely random and bullshit dragonkin spawn in and attack you for no reason other than artificial padding of the game.
