You can add a little healthy sugar to them. 1lb frozen fruit, ½cp honey and ¼cp corn syrup. Cook over medium low heat until the fruit softens. Smash it up and you'll have a nice fruit syrup with your carbs. 😉
I managed to make fluffy flapjacks and I just substituted the corn syrup with water for the fruit and honey syrup (bc a few peeps have diabetes in my group}.EVERYTHING WAS A HIT!! I tell ya, nothing gets you goin' for rehab like comfort eats! YAY!! Rehab aint so bad now.

In the south most of us in my area use electric stoves. Most southern cooks cook pancakes in a skillet. Love those crispy edges. We cook our ho cakes the same way.

You are wrong…. You will be surprise how only using water taste just as good. The key is not to over mix and toughen the gluten in the flour.
Use a lot of butter to cook them in. Never use it almost dry pan.
