I made maddur vada with the exact recipe. Tase is great but it became too soft after it cooled down. Onions on the surface are brown to black. Any more frying, it tastes burned and bitter. What did I do wrong?
Next time, for first you fry half cooked, after bit cooling again fry.. double fry..try this.. Onion will bit turn bit blacker in hotels also. Next time add less onions if you are feeling bitter.when we deep fry onions it will turn bit black..

You can store, but don't store for long time we add raw onions
