I'm no expert baker, but depending on exactly what is in the batter, it may not be viable to store it over any period of time. You can certainly make cookie batter that will keep for ages prior to baking, but I have a hunch the boutique cookie company that makes new recipes weekly is using recipes designed to keep like that.
