    My dad always closed his exhaust up to 2/3 of the way when he was cooking, depending on how much food he had across the grill. He said it helped keep the temp even across the grates. If he was only using the grates closest to the firebox, he’d have it 100% open. Half full, he’d close it 1/3 of the way, and if using the whole cooking surface he’d close it 2/3. He swore it made a big difference even though it’s just a tiny bit of damper movement.

    I'm really great at smoking a lot of things. I have many different smokers. I turned an old fridge into a smoker plus a barrel and I have an offset and a pellet grill which for some reason people call a smoker.....i never will call a pellet grill a smoker but this guy is right on. Never start your charcole with lighter fluid.

      I still got a lot of arguments of people saying it’s fine because Myron Mixon does it and one competitions, but I still haven’t heard anyone tell me the benefits of using lighter fluid. My chimney gets the charcoal lite faster without worrying if it my tanker with my food quality

    I use 2 chimneys, one on top of the other. The additional height creates a strong updraft, like a jet engine, and it seems to me that the coals get up to temp a wee bit faster. You can also make a taller sleeve from a sheet of sheet metal.

    Great Video on how to fire up your smoker. I especially like the adjustable jack stand underneath the firebox. Is there a particular why you have a jack stand underneath the firebox?

      It’s very thin metal, and the added weight of wood and charcoal will eventually cause it to droop. I’ve also added some bricks in there. My old smoker developed a huge droop after one season and I’m just trying to prevent that. Thank you for watching and commenting!

    Kevin, I love using lighter fluid to start my chimney ! It also makes a great binder to make your rubs stick ! Ok, you got me , I’m kidding ! I use the same type of burner to light my coals in the chimney ! I add the lump to the fire box when 3/4 of it is either glowing red or ashed over. Good video Kevin !

    Thank you for the tips in your videos. My father passed away 9 years ago and I have had his smoker he had just bought, just haven't had the courage to use it. I'm going to this weekend, fingers crossed. My downfall might be getting the charcoal lit.... I also have his charcoal grill and chimney, but have never been able to get the charcoal to light no matter what I do...

      I went all out with a 17 lb brisket, and just pulled it off after a excessively long time trying to get it to 195, at least I think it was too long, 16 hours..... Lots of learning moments too probably contributed to that, fire going out, billowing smoke a few times.... It's resting for a while and all I want to do is cut into it, it's killing me bc it smells good and I have never had brisket.

    I soak a couple paper napkins in lighter fluid and it works great. Doesn't cause any odd tastes like soaking the charcoal in it would.

    Just bought a smoker and learned a lot from this vid. Question though.... I understand that you can add wood chips/logs such as Hickory or Apple to the smoker also and if so do you still control the temp by the vents because I couldn't get mine down to 225/235 degrees for the pork ribs I was trying to cook yesterday...

      On certain smokers once it gets hot it’s hard to get down even with choking down the fire, but with enough fiddling you’ll figure it out. More importantly, my first couple years I wanted low and slow (225F) now I cook everything at 275F, I need to get it cook and back to hanging with the family. 16 hour cooks knocked down to 10-12 makes a difference over the years.

    I'd appreciate you doing one of these for the WSM. Took your advice and went for one and I've loved it so far.
    I've watched loads of videos on it and none of them seem to work. Really struggling to keep temps over 225F for any period of time and stay there. Using briquettes with the minion method and trying not to light too many briquettes in the chimney as I don't want it to burn too fast and I want it to follow the ring for even heat.
    Is it simply that I just need to use more coal?

      Great to hear. I just got a WSM and fiddling with it. I'll try and get a video out in the near future once I dial it in. I'm using lump charcoal in there, and loading it up, hollowing out the middle a little, with 3-4 wood chunks mixed in there. Then I pour 3/4 lit charcoal chimney in the middle and play with the intake vents on the bottom, because its getting to 400 degrees fast. It is pumping out some thicker smoker, but I can't tell if that's an issue. BBQ has tasted great.

      @@ComparisonCooking will go and have a look. I went for the big boy, so that's probably got a lot to do with it. With hindsight, I'd definitely go for the medium sized one, but hindsight is wonderful. 😂 Just means I'll have to get another one next year as well. Haha

    How do you hardly have any smoke when lighting, and adding additional wood into the base? I use a chimney and the starters you have shown. Literally smokes up my entire area in the back. It does lessen significantly once its ashed of course.

    What about the top where the smoke come out the chimney. What's all that adjustment about and controlling the smoke to come out?. What do I do with that, let it stay open all the way or half way?

    Tell me please, do you have to keep adding charcoal to the pile for say a long 8 hr cook? Also how do you use (apple) wood chips for flavour? Thanks!

      Yes, you will need to probably need to add charcoal around 4 hours and maybe another small amount around 6 hours. Chips are hard to use in these smokers. Try to find wood chunks or small splits. When adding chips you probably want to add a good handful every 10 minutes for the first 90 minutes then just let the charcoal do the work from there. You can keep adding chips for up to 3 hours at whatever time interval you like, but after 3 hours I don’t see the chips adding much value after that. Good luck 👍

      To your reply comparison cooking, how much would you add? Everytime i add to mine for a long cook i get huge spikes of fluctuating temperatures. Am i meant to just let the temp drop back to the preferred temp not worrying about higher temp or only add a specific amount to prevent temp rising? I cant seem to keep it consistent it either sky rockets or drops drastically. I dont have a side door on my offset smoker only the top part of the offset chamber.

    Why no starter cubes? I've made my own from eggshell carton, sawdust and candlewax. I can't taste any difference with that over newspaper or propane. I use out of convenience.

      If the smoker has a lot of air gaps around the lid, you might need to close the exhaust vent by 50%

      Haha, it must be an optical illusion. It is a little close, but not as close as most people think. At least 18 inches. When i'm not filming i normally move it a little further out.
