Thanks but thanks. I might become one when I see something historical, starting, for example, this way: in 1125 one of my ancestors murdered his neighbor, settled on his land and built a shed. After killing a neighbor on the other side, his son doubled the size ... etc. As a historian, I have no interest in propaganda, manipulation, promotion of fiction, fabrication of history, etc.

I know it's important to have a gluten-free offering for customers, but quality is key. I saw this on Google - maybe it will help with the Guinness GF cupcakes, or some of the other GF recipes ~ "Gluten-free baking can often be dry so it is important to add moisture. This can be achieved by increasing the amount of vegan butter or oil, adding fruit such as applesauce or pumpkin puree or using brown sugar rather than white sugar." ~Good luck with the opening!
OMG! Just last week, I marinated boneless, skinless chicken tenders in buttermilk for about 6 hours in the fridge. Then, made a beer batter with an amazing amber ale beer (bit of flour & lots of seasonings). Dredged the tenders through it and deep fried. Absolutely amazing! My son in law said that if chicken was cooked that way from now on, he would be VERY ok with that lol. So delicious and it's making me want them again just typing this lol.
Rum is always a great addition to cakes from a light sponge soaked in rum syrup to something denser with fruit & nuts. Something nice for the cafe could be a chocolate rum ball they are just 2 bites & perfect for that person who just wants a little something decadent with their tea or coffee. Good Luck all the improvements look fantastic.

Hi Julie, I am loving this series. What a gorgeous property!. I am an American who lived in England 20 years ago.. I am also a chef, who specializes in Gluten free.. the Guinness has Barley malt , which contains gluten, so it couldn't possibly ever be Gluten free unless there was a gf beer.
Since you asked: I do love a bit of Brandy or whiskey in an applepie serrved with a vanilla custard sauce. Rhum is lovely in a fresh fig pie or for Baba au Rum, or anything flavored with strong coffee, St. Germain liquor (sweet elderflower) makes a lovely flavouring for a cake/muffin with a lemon curd or custard filling or with rhubarb and strawberies for an truly English early summer flavor (try it!), A splash of Amaretto is marvelous in any gluten free recepie using almond flour to give the almond flavor extra zip, and of course who doesn’t LOVE tiramisu that always has marsala wine in the mix? Gin can also give an interesting zip (in small amount) to strongly citrusy favorites, for an English-American idea try making a grown up-version of zingy lemon squares with an English elderflower and gin syrop on top? A kahlua and mortar crushed cardamom butter cream is heavenly on tiny muffins/cup cakes for coffee and rosepetals and lavender flowers layered with sugar in dark jars make brilliant Italian biscotti after about 2-3weeks (with flowers and all mixed in!) The sugar draws out the oils and frangrance from the petals and flowers into the sugar, just shake the jar every few days, and add flowers and a cm of sugar whenever, then use in your flower speckled biscotti and lastly dip one end in melted while or dark chocolate and store in airtight containers. That way a bake keeps well even when business is slow. Other edible flowers great for baking and decorating : violets, apple blossoms (some from the crabapple tree?) mimosa (you’d need an Italian garden for that, sorry) and lilacs are wonderful and so pretty too if you dipe them in eggwash and dip in sugar, or use as above. Also leaves of the more fragrant forms of geranium, (with less blooms) are lovely for frangrant sugar. All rose petals work for this btw, as long as there’s no pesticides involved (naturally). Calenduala flowers, and dandelion greens all the cress flowers are lovely and beautiful in a salad! I know this bit isn’t about booze in baked goods but when you have such a lovely garden why not bring the blooms into the menue? ;) Then there’s herbs of course and if you like apple sauce or apple jelly, pick just a small bunch from the the crabapples in the fall and the flavor amd intense pectine of only a handfull in the mix with your regular apples will take it to a whole new level and the color will be a marvelous red! 🙏

And then lockdown /covid happened and we can’t get back! So sad. Just wanted to drop a note tho- about your GF Guinness cake. Guinness has a TON of gluten in it. So people who have to be gF can not actually eat that cake. So just make it regular so it’s a “moister” cake too. There is really no reason to use the GF flour- if you’re adding that beer -specifically. Amazing you tried to do something for us GF folks. But… lol -yeah… love love love everything about this show.

You really need to capitalize on the Earl of Sandwich theme. You should have a line of sandwiches, i.e. Earl of Sandwich IV, V, VI and the current Earl's favorite sandwich, etc, etc. You also need a lifesized photobooth where people can get their photo with the original "Earl of Sandwich" (maybe a mannequin, cutout or painting). I think you could really make more of the sandwich.
As someone who is a celiac and has to eat gluten free. I can tell you that gluten free certainly doesn’t include Guinness beer. Gluten is anything that is derived from: barley, rye, wheat, and sometimes oats. Beer has malt in it which is derived from barley which means it isn’t gluten free.
Guinness cake has been around the PNW (the states) for quite a while. I normally always see like every bakery have them or brownies. Or whisky cakes come out for st. Patrick's day, also whisky chocolates. There is an amazing shop in Pendleton, Oregon that has world class chocolatiers that just decided that they love the small community but they have the best chocolates made with the Pendleton whisky. Maybe a cake with a local area beer would be more on brand with y'all green project.

I'm in the US but when i visit the UK, I will definitely visit your beautiful historic Mapperton! Please keep up the great work! I like the idea of the Cafe opening. Some great sandwiches, soups and salads with french fries and coffee selection would be great! Local, Organic please.
This is my new favorite channel I love history, and cant afford to travel outside of my state (Ohio) so this is perfect! I love Julie being from the states and traking on all this English history makes me smile!
Oh pasties! I love them! So good you guys should consider doing a cheese and grape and nuts prepackaged or local sourced, cause people could bring their own wine, and have picnics outside!
The Guinness cake sounds delightful, would love to try it, a good recipe involving alcohol is one called tipsy cake wich has brandy in it, it is very nice indeed, I believe it is a Victorian recipe, the recipe I use is taken from Actons modern cookery from 1868
well, I'm not sure if this has been mentioned yet but Grasshopper pie. It's made with 2 or 3 liquors, I know Creme de Minthe and Creme de Cacao perhaps another, marshmallows and perhaps heavy cream. I'm not 100% sure on the other ingredients BUT just whip it all together and freeze. you don't bake it so the liquor doesn't cook out ;) YUM!

I make a wonderful bundt cake, I generally flavour it with either mead or scotch. I also love a good Guinness as well as a good Guinness cake(though I actually prefer the beer itself). Also, cherries jubilee is so lovely! (Sorry, I don't have recipes for you. Maybe another time!)

Delicious moist bundt cake: A delicious Jewish New Year tradition that will make any honey cake hater a honey cake fan. Personally, I prefer an extra moist, sweet, high New Year's honey cake. I tested some 50 or so cakes, on the way to creating this one. This one is queen of the realm - rich with honey, just perfectly spiced. Majestic in taste and stature. One tester gave the ultimate compliment saying "This one is worth the price of the book". Like most honey cakes, this is a good keeper and can be made a couple of days ahead. 3 3/4 cups all-purpose flour 4 teaspoons baking powder 3/4 teaspoon baking soda 1/2 teaspoon salt 4 teaspoons ground cinnamon 1/2 teaspoon ground cloves 1/2 teaspoon ground allspice 1 cup vegetable oil 1 cup honey 1 1/2 cups granulated sugar 1/2 cup brown sugar 4 eggs 1 teaspoon vanilla 1 cup warm coffee or strong tea or coca cola (I use espresso mixed with coffee) 1/2 cup fresh orange juice 1/4 cup rye or whisky (substitute orange juice or coffee) (I use bourbon or scotch, but sometimes a kirsch or mead) 1/2 cup slivered or sliced almonds (optional) This cake is best baked in a 9 inch angel food cake pan but you can also make it in: One 9 or 10 inch tube or bundt cake pan, a 9 by 13 inch sheet cake or two 9 by 5 inch loaf pans. (I bake mine either in the angel food pan or a large bundt. Comes out great either way.) Preheat oven to 350 F. Lightly grease pan(s). For tube and angel food pans, line the bottom with lightly greased parchment paper, cut to fit. For gift honey cakes, I use "cake collars" (available from Sweet Celebrations) designed to fit 9 by 5 inch loaf pans. They give the cakes an appealing, professional look. 2. Stifado(Greek stew, and please correct me if I'm wrong here - this was originally found by me in an old church cookbook) 4 lbs beef chuck or round steak 2/3 cup vegetable oil 1- 6oz can tomato paste 1 1/2 cups red wine 8 whole black peppercorns 2 bay leaves 1 tsp ground allspice 2 cloves garlic, halved salt and pepper 3 lbs small white onions Cut meat in 1 1/2" cubes and saute in oil until browned. Add remaining ingredients except onions. Bring to boil and simmer, covered. one hour. Add more wine if necessary(#cookingwithalcohol). Add onions and cook until tender - 30-40 minutes. Discard garlic and whole ppers. Sauce should be thick. Serves 8. Wine suggestion: Heavy burgundy, Petit Sirah, Zinfandel. Yum yum. 3. Cherries Jubilee, - basic recipe, but can be even more basic!: 3 tbsp butter 1/4 cup brown sugar 1 tbsp honey 15 oz dark, sweet cherries(about 2 lbs) 1/4 cup freshly squeezed orange juice(you could also instead add water with some orange zest, etc) 4 tbsp kirsch liquer(also very flexible on the alcohol) 3 tbsp triple sec(and yet again, but citrus truly brings out the flavour in the delicious cherries, as do almonds!) 1/4 tsp ground cinnamon 1 Tbsp corn starch 1/4 cup water (Vanilla ice cream to serve) In a large saute pan over medium-high heat, add butter, sugar, and honey. Cook until sugar dissolves. Add cherries and its syrup, orange juice, kirsch, triple sec, and cinnamon. Bring to a simmer. Prop pan to the side to ignite evaporating liquer(gas stove, or otherwise ignite with a long kitchen match). Return to heat and simmer for 4-5 minutes. In a small bowl, mix together the corn starch and water. Stir slurry into the mix and continue cooking until sauce thickens to desired consistency. (Also, instead of the corn starch and water mixutre, for a more robust and rich flavour you could use a roux.) I rarely write down any recipes as I just go with the flow, but I hope someone will genuinely enjoy these to their fullest! I have so many memories regarding family recipes, but these are all absolutely wonderful. Thank you so much to the chef for sharing a lovely Guinness cake recipe. It looks divine!

Not an alcohol-based cake, but you might try an old-fashioned Chocolate-Mayonnaise Cake. A bit like chocolate pound cake but very versatile, making up into cupcakes, layer, sheet, or loaf cakes! The mayonnaise replaces the butter or oil, and the extra eggs add moisture and extra richness to the cakes.
Maybe one day my dream will come true and I can visit . I live in Ontario,Canada. My grandparents were from England and its on my bucket list. Luv your videos
Love you guys. FYI: Guinness is not gluten free. You can’t make a gluten free cake with beer. You can with wine or hard cider, but not beer. Also, you have to be careful with cross contamination. So you can’t dip a flour covered baking cup into chocolate and then bake a gluten free dessert with it.
I was thinking the same thing! Sounds yummy but if it has beer in it, it wouldn’t be GF because of the malt (barley). It could be wheat free but not gluten free. 😊 The things I’ve learned through being Celiac. 😫
Julie you have to drink Guiness with Milk. Mix it with Evaporated Milk, but Condensed is better because Guiness is on the bitter side. That's how we do it in my island.
Just a question are sandwichs sold in the Cafe? Are they made from the original recipe the Earl invented? If I ever visit I would love to have an afternoon tea which includes the Earls sandwhich. I would love to buy a cook book from there which includes traditional recipes that were served at Mapperton. I love the story of the American countess. It would be so neat if Mappertom sold a beautiful womems journal for each day of the year that you could write in. The journal could include stories like the Christmas tree story when she was a child. Bits of colorful or funny history as well. I'm really into keepsakes that will remind me of the visit, sadly there's nothing on your website at the moment.

I've just discovered your channel and I've started watching your episodes from the beginning. I absolutely love them so far and look forward to watching the others in order! You and Luke are so down-to-earth and personable and you bring the history alive in a fun way. My favorite ways of including alcohol in my baking are brandy in apple pie, rum in pumpkin pie and a delicious brownie recipe that uses dark chocolate, raspberries, and port. Being very gluten sensitive, I am also happy that your cafe has gluten free options; and since I hope to visit there sometime from the USA I'm hoping the sandwiches will also have gluten free bread as an option.

I discovered Mapperton Live and American Viscountess a few months ago and am enjoying both so much. If I lived in England, I would most definitely visit Mapperton! I have a question though regarding the Montagu family. I just watched a tour of the British Museum. One of the first things they said was that the original museum was in a place called Montague House or Manor. I was just wondering if the Montague Manor had anything to do with your Montagu family? At my breadstore here in the western chicago suburbs we made a wonderful and irresistable Guiness and Gouda bread loaf. It is fabulous and a fan favorite. As someone who is a celiac and has to eat gluten free. I can tell you that gluten free certainly doesn’t include Guinness beer. Gluten is anything that is derived from: barley, rye, wheat, and sometimes oats. Beer has malt in it which is derived from barley which means it isn’t gluten free.

Guinness cake has been around the PNW (the states) for quite a while. I normally always see like every bakery have them or brownies. Or whisky cakes come out for st. Patrick's day, also whisky chocolates. There is an amazing shop in Pendleton, Oregon that has world class chocolatiers that just decided that they love the small community but they have the best chocolates made with the Pendleton whisky. Maybe a cake with a local area beer would be more on brand with y'all green project.

I'm in the US but when i visit the UK, I will definitely visit your beautiful historic Mapperton! Please keep up the great work! I like the idea of the Cafe opening. Some great sandwiches, soups and salads with french fries and coffee selection would be great! Local, Organic please.

The Guinness cake sounds delightful, would love to try it, a good recipe involving alcohol is one called tipsy cake wich has brandy in it, it is very nice indeed, I believe it is a Victorian recipe, the recipe I use is taken from Actons modern cookery from 1868

Mix hot fudge and sweetened condensed milk, poke holes in the cake, and pour the mixture on top. Your cake will be moist every time!
well, I'm not sure if this has been mentioned yet but Grasshopper pie. It's made with 2 or 3 liquors, I know Creme de Minthe and Creme de Cacao perhaps another, marshmallows and perhaps heavy cream. I'm not 100% sure on the other ingredients BUT just whip it all together and freeze. you don't bake it so the liquor doesn't cook out ;) YUM!
You can use applesauce to make the gluten free recipe more moist

I make a wonderful bundt cake, I generally flavour it with either mead or scotch. I also love a good Guinness as well as a good Guinness cake(though I actually prefer the beer itself). Also, cherries jubilee is so lovely! (Sorry, I don't have recipes for you. Maybe another time!)

Found a few recipes that these are likely to have been based off of, plus an extra ;)
1. Delicious moist bundt cake:
A delicious Jewish New Year tradition that will make any honey cake hater a honey cake fan. Personally, I prefer an extra moist, sweet, high New Year's honey cake. I tested some 50 or so cakes, on the way to creating this one. This one is queen of the realm - rich with honey, just perfectly spiced. Majestic in taste and stature. One tester gave the ultimate compliment saying "This one is worth the price of the book". Like most honey cakes, this is a good keeper and can be made a couple of days ahead.
3 3/4 cups all-purpose flour
4 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
4 teaspoons ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
1 cup vegetable oil
1 cup honey
1 1/2 cups granulated sugar
1/2 cup brown sugar
4 eggs
1 teaspoon vanilla
1 cup warm coffee or strong tea or coca cola (I use espresso mixed with coffee)
1/2 cup fresh orange juice
1/4 cup rye or whisky (substitute orange juice or coffee) (I use bourbon or scotch, but sometimes a kirsch or mead)
1/2 cup slivered or sliced almonds (optional)
This cake is best baked in a 9 inch angel food cake pan but you can also make it in: One 9 or 10 inch tube or bundt cake pan, a 9 by 13 inch sheet cake or two 9 by 5 inch loaf pans. (I bake mine either in the angel food pan or a large bundt. Comes out great either way.)
Preheat oven to 350 F. Lightly grease pan(s). For tube and angel food pans, line the bottom with lightly greased parchment paper, cut to fit. For gift honey cakes, I use "cake collars" (available from Sweet Celebrations) designed to fit 9 by 5 inch loaf pans. They give the cakes an appealing, professional look.
2. Stifado(Greek stew, and please correct me if I'm wrong here - this was originally found by me in an old church cookbook)
4 lbs beef chuck or round steak
2/3 cup vegetable oil
1- 6oz can tomato paste
1 1/2 cups red wine
8 whole black peppercorns
2 bay leaves
1 tsp ground allspice
2 cloves garlic, halved
salt and pepper
3 lbs small white onions
Cut meat in 1 1/2" cubes and saute in oil until browned. Add remaining ingredients except onions. Bring to boil and simmer, covered. one hour. Add more wine if necessary(#cookingwithalcohol). Add onions and cook until tender - 30-40 minutes. Discard garlic and whole ppers. Sauce should be thick. Serves 8.
Wine suggestion: Heavy burgundy, Petit Sirah, Zinfandel.
Yum yum.
3. Cherries Jubilee, - basic recipe, but can be even more basic!:
3 tbsp butter
1/4 cup brown sugar
1 tbsp honey
15 oz dark, sweet cherries(about 2 lbs)
1/4 cup freshly squeezed orange juice(you could also instead add water with some orange zest, etc)
4 tbsp kirsch liquer(also very flexible on the alcohol)
3 tbsp triple sec(and yet again, but citrus truly brings out the flavour in the delicious cherries, as do almonds!)
1/4 tsp ground cinnamon
1 Tbsp corn starch
1/4 cup water
(Vanilla ice cream to serve)
In a large saute pan over medium-high heat, add butter, sugar, and honey. Cook until sugar dissolves. Add cherries and its syrup, orange juice, kirsch, triple sec, and cinnamon.
Bring to a simmer. Prop pan to the side to ignite evaporating liquer(gas stove, or otherwise ignite with a long kitchen match). Return to heat and simmer for 4-5 minutes.
In a small bowl, mix together the corn starch and water. Stir slurry into the mix and continue cooking until sauce thickens to desired consistency. (Also, instead of the corn starch and water mixutre, for a more robust and rich flavour you could use a roux.)
I rarely write down any recipes as I just go with the flow, but I hope someone will genuinely enjoy these to their fullest! I have so many memories regarding family recipes, but these are all absolutely wonderful. Thank you so much to the chef for sharing a lovely Guinness cake recipe. It looks divine!

My gingerbread recipe uses Guiness, molasses, dk. brown sugar. I bake it in a bundt pan. Moist and delicious. Whipped cream on the side.

Not an alcohol-based cake, but you might try an old-fashioned Chocolate-Mayonnaise Cake. A bit like chocolate pound cake but very versatile, making up into cupcakes, layer, sheet, or loaf cakes! The mayonnaise replaces the butter or oil, and the extra eggs add moisture and extra richness to the cakes.

Love you guys. FYI: Guinness is not gluten free. You can’t make a gluten free cake with beer. You can with wine or hard cider, but not beer. Also, you have to be careful with cross contamination. So you can’t dip a flour covered baking cup into chocolate and then bake a gluten free dessert with it.
I was thinking the same thing! Sounds yummy but if it has beer in it, it wouldn’t be GF because of the malt (barley). It could be wheat free but not gluten free. 😊 The things I’ve learned through being Celiac. 😫
Julie you have to drink Guiness with Milk. Mix it with Evaporated Milk, but Condensed is better because Guiness is on the bitter side. That's how we do it in my island.

recipes that were served at Mapperton. I love the story of the American countess. It would be so neat if Mappertom sold a beautiful womems journal for each day of the year that you could write in. The journal could
include stories like the Christmas tree story when she was a child. Bits of colorful or funny history as well. I'm really into keepsakes that will remind me of the visit, sadly there's nothing on your website at the moment.

My favorite ways of including alcohol in my baking are brandy in apple pie, rum in pumpkin pie and a delicious brownie recipe that uses dark chocolate, raspberries, and port. Being very gluten sensitive, I am also happy that your cafe has gluten free options; and since I hope to visit there sometime from the USA I'm hoping the sandwiches will also have gluten free bread as an option.

Love your gluten free desserts. The only problem with the Guinnrss cake is that beer has gluten in it so that one is not gluten free.
YES! Tasty but simply cannot be gluten-free.
I was going to mention the same thing. Plus it is not vegan because fish products are used in the filtering process.
If you find Guinness a little strong in flavour as a drink you can add a splash of Blackcurrant cordial (undiluted) to it 😋
Or we in the US make a Black and Tan drink with it. Guinness and a light colored beer. It’s fun to watch the bartender pour one into the other

I discovered Mapperton Live and American Viscountess a few months ago and am enjoying both so much. If I lived in England, I would most definitely visit Mapperton! I have a question though regarding the Montagu family. I just watched a tour of the British Museum. One of the first things they said was that the original museum was in a place called Montague House or Manor. I was just wondering if the Montague Manor had anything to do with your Montagu family? In the gluten free cakes you shoul try to put aplle sauce , it gives moisture to the cakes and it doesn't get oily

At my breadstore here in the western chicago suburbs we made a wonderful and irresistable Guiness and Gouda bread loaf. It is fabulous and a fan favorite.
