For this 80 yr old that has only been canning for the last 5 yrs. I appreciate your contribution to this Canuary and appreciated the fact that I am not the only person that tends to lay things down and have them mysteriously disappear on me. I too love sauerkraut, but have been hesitant to ferment it. This video has been very educational for me and I also have been using ForJar lids since they became available to we canners without any fails.
As an individual in healthcare and somone with a biology degree with extensive research experience- I love that you encourage safe canning! All people have the choice when it comes to the risks they take for themselves and consent to, but illnesses caused by microorganisms are the biggest killer worldwide (we just don't see it all that often in the developed world) and foodborne illness killed many in the recent past, survivor's bias is never an argument when someone wants to know if a method for canning is safe :) Everyone deserves to make educated choices and it starts with creators like you!
I agree! Big fan of learning the correct way then you can make your choice but you can’t know until you learn. Encouraging new canners to rebel can is so wrong!
Thank you for this comment! Just went around with someone on a Homesteading group when asked of a safe way to can broth. I explained the dangers of botulism if improperly canned broth pointing them to safe tested methods while another found it imperative to distinguish between botulism spores and botulinum toxin while saying 180F for 10 minutes kills the latter. Hopefully the new canner took the warning to heart and researched for herself. But who knows?

Do you happen to know if the probiotics benefits will still be there if you freeze your kraut?? I know this is a canning video, but I figured if anyone would know, it'd be you!
Outside of Canuary I just wanted to say you inspired me to jump into the world of fermenting. I never like sauerkraut until I made my own, thank you so much. Now I'm playing with other vegetables

I fermented kraut for the first time last year and loved it. Only did a couple jars due to refrigerator space and not knowing whether we would like it. Thank you for showing us that we can make it shelf stable even if we lose some of the "good" stuff from fermenting. Loving Canuary!!!
My mom made and canned sauerkraut and it was the best! She wasn't one to write down recipes of things that she made. Sadly, she passed before I started canning so I lost the chance to learn it from her. I'm so thankful that you have chosen sauerkraut for Canuary.

Anna is a jewel. She is very refreshen. I love the fact she talks to her self when she thinks no one is listening. She comes across as down to earth and gives a great amount of valuable information. We love sauerkraut! I absolutely love the idea of being able to waterbath can it after fermenting it! thank you, I decided to just order the book. You can never have too many resources! Lol...I'm so happy that you found your lid! We have all been there!! 😊
I like you love sauerkraut I haven’t done too many flavors, but I did do a lemon dill that I found in the book mouthwatering, sauerkraut, and it was amazing but now I may have to make a bunch of it for canning because well yummy and a big pot of sauerkraut soup sounds delicious
I grew up with my mom fermenting her sauerkraut in a big crock that sat in the corner of the kitchen. When she felt it was ready she would can half and fresh eat the other half. I am the only one that loves it, so I made them in jelly jars last time and will upgrade to a pint jar. I so enjoy Canuary each year and learn a lot. My German grandmother used to make homemade cabbage, and after we ate it fresh and out of the refrigerator for weeks, she also canned it so it was shelfstable in the root cellar. Sadly, I am 60 and she is long gone. I’ve asked a few of the locals if they ever heard of canned sauerkraut and they all say they just eat it till it’s gone.

Well, thank you to Leisa - i’d never have found you without canuary as i’ve never done fermenting. But, it’s something we’ve recently discussed doing so guess who will be making sauerkraut? Have to buy my forjars lids from Amazon as in the UK but that’s fine. Never had a fail yet with them either. Glad to find another safe canning channel.

Just an update to my previous post the day you posted your video. I bought myself 2 - 1 gallon fermentation kits so i can make bigger batches. I started 1 for saurkraut Friday night. I checked it today, and so far, so good. I always ferment a 5 gallon food safe container of KimChi. I make some easy on the tymmy and some that will keep your sinus open for a few days. That one is for my son. The other for my hubby and I. First time i have fermanted saurkraut. I am so excited. Thank you for sharing and to Leisa and 4 jars for sponsoring Canuary 24.

I used to make a huge crock of sauerkraut. My great grandfather always made homemade wine and his daughter that was my grandmother was German and she canned, made kraut and always preserved everything from her garden. I raised my kids on kraut. Good job making the kraut. Have a blessed night!

I just love sauerkraut. Maybe it because I'm I have a German heritage. My great-grandparents used to make it in a 20-gallon crock every year. I still have the crock. LOL Thanks for sharing.

My german born husband, Heinz, loves sauerkraut. So I grow lots of cabbage and have been harvesting it for the past month and have many more to get if I can keep them from freezing or floating away. 😳 I have some in the fridge and more that is fermenting right now. I've always wanted to can it, one to have it longer and two, to save room in my fridge. But, like you, I just haven't brought myself to do it because I knew canning it would kill the goodness I get from fermenting it. But hey, if you can do it, the Queen of all fermented food, then I can too! Thank you so much for sharing!!

Thank you, I have been canning sauerkraut since the 70’s. In the last few years I’ve been interested in fermenting it in small quantities I love that others lose things when you aren’t moving away, I too do it💁 I love how you trimmed the cabbage leaves with the jar ring!

Thank you, I have been canning sauerkraut since the 70’s. In the last few years I’ve been interested in fermenting it in small quantities I love that others lose things when you aren’t moving away, I too do it💁 I love how you trimmed the cabbage leaves with the jar ring!
