Steelrising is a new soulslike game in a new setting. It has it own unique weapons and enemies, an actual story and cutscenes. I will be playing through the game getting all trophies, weapons, civillian stories, side quests, echoes, upgrades and of course - defeating all bosses.

I haven't done ANY sidequests. Just the story-related ones.
I hope the damn thing pops up, because it's the only one left to get plat for me.

What are the mandatory side quest? Name?

Just follow the main story and complete required quests. You know it´s a mandatory quest when you are tasked to complete it, before you can progress the story.
If I remember correctly, it´s 1 side quest you have to do
