When I make a French seam, I use round tooth irons. That way--without the angled holes--there is less stress and stitching showing on the seam on the finished side. I do the same when making a turned bag. Give it a try sometime.
Nice. Have a look at a woodworking vise called a Moxon Vise. Since you don't need the power grip for leather, you can substitute cheap spring clamps for the bolt and nuts. I use mine for edge painting, glueing long pieces, and burnishing long edges, but it would also be good for the fold over you show here. Cheers
I thought you should have a leather stripe on the backside that you sewed through also. That would be the reinforcement. Or is that called something else?
If you are covering the inside seam, your method is fine. If it will be exposed, it does not look good on the inside seam. The glue totally made the top of the grain look bad, and the seam not laying completely flat does not look good. Just one person's opinion.

Could you moist with water the parts that you fold?
Yes you can, especially if you are using a stiffer leather
Can you use double sided tape instead of glueing the seam.

You’re right but I did mention that you should only do the glue method if you’re lining the piece
