The point of the butter is to blend in with the red bean paste when you bite into it to create the sweet and creamy texture while chewing and biting on the more dry and crunchy texture of the matcha scone. Just remember this isn't an everyday meal but rather a treat to enjoy and experiment with once in a blue moon. It's probably very difficult for the west to culturally accept this combination of components but from my understanding and dining at many korean restaurants and cafes, butter is not a very common ingredient. So for some Koreans this is a delicacy; an experience. But again, not everyone is obligated to like it ✌🏻

You could probably spread a thin layer of butter (or margarine) on the top half of the scone. Some red bean paste have butter in the final stages to make the paste glossy.
That’s how ang-butters are supposed to be. Ang-butters are basically putting butter slabs and red bean paste in bread, scones, dacquoise, etc. They are very popular in Japan and Korea, although I agree with the crying arteries😂
