Hi. Jeff her. I did 2 batches of this recipe. the first batch I nipped off the ends about 1/4" before I put them in the brine. The second, I followed the recipe and put the cucumbers in the crock & brine. Followed the steps otherwise to the "T". The 1st batch came off crunchy / crispy. the 2nd wasn't. The only difference was cutting the ends off before or after the brine/fermentation. The recipe says cut off the blossom end "after" the brining, but other recipes say cut off the end "before" the brine. This makes for crunchy chips.
That is a great tip. I have always done it the way my grandmother taught me which was to just cut off the ends after the brine. But it makes sense to do it before. I'll give this a try on my next batch this summer.

Can I use cinnamon sticks and cloves instead of oil?
I have never tried that. If you do, please let me know how it turns out.
