My mom and grandma used to lay an old pillow case over her crock and tie a string around it. I still have her old crocks. Such great memories growing up in NC

Omg! I feel so much better! I currently have these in brine, cut in chunks. I was so afraid I ruined them because my ball recipe says to chunk/cut after you remove from the brine. I thought I might have needed to keep them hole and couldn't find them cut up anywhere In the brind! I feel more confident they will be OK now! 😆

I never realized the 14 Day Pickle was sweet! I love sweet pickles, I like thin Dills for sandwiches. I like both as Relish. That crunch was fantastic! The Alum protects the color or the crunch?

This is what my mom made and I make....well worth the effort. You can not find ANY pickle this delicious. These pickles are great tjust to eat and they make anything taste better - tuna salad, potato salad, chicken salad, deviled eggs....or just added to a bologna sandwich!!! I'm getting my supplies ready and plan to visit the Farmers Market to get the cukes....wish I had a garden!!!! Thanks for making this video!

I’ve been making pickles for many years but never wanted to spend the time and was nervous about making these pickles. Your video was so clear on instructions that I am now making my first batch. We call them icicle pickles in Canada. Thank you so much ❤

Great demonstration of how to make 14 day pickles! I made them with my Mama when I was a young teenager and once as an adult a couple of years ago and am about to start a batch today. I couldn't remember how much salt to start with! Thanks for the reminder!

I love these pickles…my mama made them exactly like you did, but she used gallons jars because she couldn’t handle a heavy crock…Mama called them icicle pickles & said they were called that because of cutting them into icicle shapes…..I use the same recipe but, I liked slicing mine into circles….and when canning day came, I would put couple heads of dill, straight from the garden , into bottom of jar…then fill jars…..I called them sweet dills, still very sweet, but just a hint of dill….I won 3rd place with those in NC state fair….many years ago……I live in Florida now, don’t have a garden, so I’ve not canned pickles in a long time…..I do however make sweet refrigerator pickles from dill pickles to just keep in the fridge…they are good but not as good as 14 day pickles…
    Enjoyed this video!!

Can you cover the pickles in a 5 gal food grade bucket with a bucket lid sealed for the 7 days?? As long as pickles are submerged?

Megan does your cucumber‘s ever taste bitter? If you will cut the ends off and rub the ends of the cucumbers with the end you cut off until the white foam comes out turn to the other side and rub that end til the foam comes out wipe the ends off and it will take the bitterness out of your cucumbers. I guarantee that this works. Not just for doing pickles.

My grandmother made these but they looked turquoise - I am wondering if they are the same ?

    • @TrueGritAppalachianWays

I do notice the longer the pickles sit the more they turn a turquoise color, but maybe the variety of cucumber makes a difference as well 🤔 thanks for watching!

It's real crispy. And when your zucchini gets too big,you just gut it and slice into spears.

How much would you reduce the sugar for dill?

    • @TrueGritAppalachianWays
      @TrueGritAppalachianWays  3 года назад +5

Dill pickles are much easier and less time consuming than the 14 day pickles. Here is my recipe for dill pickles, simple yet delicious!
      Dill Pickles
This recipe yields about 7 pints or 3 qts
      8 lbs cucumbers 🥒
      3/4 cup sugar
      1/2 cup preserving/pickling salt
      1 qt of vinegar
      1 qt of water
      Dill (green or dried)
      Fresh garlic
Prepare your jars, wash them with hot soapy water
Prepare lids, boil them in a saucepan for at least 5 min
Prepare cucumbers, wash them under cold water, cut off the ends, and you can either cut them into spears or slices, it’s all up to you 😃
Combine sugar, salt, vinegar, and water in a lg pot and bring mixture to a boil, stirring until the sugar dissolves, then reduce heat and simmer for 15 min
Put a piece of the dill flower in the bottom of jar and 1 clove garlic for pint and 2 cloves for qt, then pack your cucumbers in jar, put another piece of dill on top of the cucumbers
Ladle hot pickling liquid over pickles until your 1/2 in from top, clean rim, put on lid and ring
Hot water bath for about 15 min

New lids have a new sealing compound and there is no need to boil for 5 minutes any more..if you do boil them b4 placing on the jar rim? Will have seal failure? How do I know? Expierence and researched the problem...
