    From as long as I can remember, South Africans tend to use cake flour for fish. The fine meal is used for both pap and porridge. The coarse meal is mostly used as pap as well.

    Hey Guys...Iwisa you pronounced it very well....Yes you can differentiate very well. Yes we normally use A to make Pap. We also use B seldomly it makes a person full for a very long time. White South Africans like the B one when making Pap for a braai. We use wheat Flour to fry fish not maize.🥰

    Your pronunciation for Iwisa was spot on. We use A for pap, porridge, (AmaRhewu/Magau, it taste like drinking yoghurt made from mealies) and many others like uPhuthu. For fried fish it's always cake flour.

    For texture i use both fine and coarse meal for pap/phuthu, for porridge we use fine one and for fish we use flour.

    You can use janpap or braaipap for grits but we use cake flour for fish. You can even buy already spiced/flavoured flour for fried fish and chicken, it comes in small packs.

      I'm just finding out that flour is used to fry fish here. That's so interesting! The States have something similar to the pre-seasoned packs, except it's pre-seasoned cornmeal for fish or seafood. We will have to give the flour a try. Thank you! 👍🏿

    There is a lot of different brands of maize meal. We can also make pap from braai pap. We also make our own grits which is called "soft porridge". We make it from the finer mealie meal
    It's very similar to grits. Where I'm from we call braai pap the whites man porridge because it's easier to make pap with and it's mostly loved by the boere "Deutsch". So yes all braai pap are courser granules which you can make grits with.

    Hi there, first time to comment😊. We use A for everyday pap and B is the same as A just coarse texture and cooks faster.
    There's also ACE my favourite maize meal for pap like IWISA. For your GRITS I think what's similar to that here would be MAIZE RICE(ACE brand) found in the same aisle you cook that low and slow stirring constantly and it has your GRITS consistency from what I've seen. Try it let me know if it is similar.

    the grainy one we do have, it is called mielie rice (B), this would be the equivalent of what you call grits. To cook pap or porridge, we use A. The fried fish you fried can be eaten with anything really, it would be a personal choice and it is very rare to eat pap or mielie with fried fish.

    I hope I cleared your mind . all the meals are from corn or what we call maize or mealies . What you call grit is corn rice or here called maize rice or mealie rice thus coarser .cake flours different brands snowflake. golden cloud etc are flours from wheat written on packaging . our local African population buy maize meal for pap and porridge . these made from what u call corn for us mealie or maize. there's a story when cast of lion king went to America they missed the pap .

    Most South Africans use A to make pap. We can add a lot of water to A to make porridge.

    First time i see maize flour used to fry fish, in SA we use cake flour for that. Both varients of that maize flour are used for pap just depends on preference.

      A = Maize is for Pap only not frying anything (seasoned flour mixture is for frying)
      B = is also for pap but braai pap which gives it a much coarser texture
      A = can be either be cooked as breakfast AKA soft porridge, which we add sugar, some love it with butter & then milk-fresh or powder depending on the person
      A = also makes Pap, which is stiffer & the degree of stiffness depends on the person/province & even tribe. Because people from Limpopo province eat different Pap from those in KZN province and people in Limpopo also eat different kind of pap from each other.
      But the obvious distinction being that KZN people put salt in their pap & those in Limpopo do not. Limpopo province is also the one province where you find a lot of people loving pap and some even eat it in the morning, day & afternoon. E.g. Pap with eggs, pap with chicken/beef stew, pap with cabbage, pap with veggies, pap with whatever basically. This is mostly because they harvest their own corn & mill it to maize, so they rarely buy maize like Iwisa from the store because they make it themselves.
      Ohh and the texture of the end result and method of cooking the pap is also different among the people in those 2 provinces

      Whew! All this talk about pap makes me want some pap! 😋 I tell ya, when we had our first taste with the meat sauce, we were HOOKED. I was on it for a WEEK straight. I MUST learn how to make it! There are a few dishes I'd like to try it with. 😋

    I've never seen the Course Maize Meal before, We use IWISA(you correctly pronounced) for both Porridge and Pap. We use Flour with spices to coat Fish for frying but the best option is to use Coating Products specifically for making KFC(Fried Chicken) or Fried Fish. I've never heard of anyone using Maize Meal/Corn Meal to Fry something

    A is pap and porridge B is what once called mealie rice. I am a s frican Indian orginally from kzn . Most s Africans useA for pap and porridge. A few decades ago Indians that could not afford rice for supper used. B. These days Indians as a treat will have B instead of rice. In Gauteng pap n vleis is sold as a takeaway like fish n chips. vleis is meatiness afrikaans n pronounced as starting with f sound . We don't have pap at home. In kzn the takeaway is bunny chow . Some brands used for pap r Ace n Nyala . most names in African languages . Difference between pap n porridge is porridge has a v softer consistency than pap. Porridge is eaten for breakfast mostly with yoghurt called Maas . To fry fish we use wheat flour n u can add brand name Maizena a corn flour which is finer than the corn meal A

    I usually don't like commenting on YT but I'll jump on, but part of the problem is that African languages don't translate well to English so there's a lot lost in translation.
    The word pap is used to mean a lot of variation that we have deferent words for or the the difference or type can be inferred from situational context.
    What you had/tried with the Stew that Chase said you must eat with your hand was made with (A) and is what people mean when they say pap. (B) makes another kind of pap that my mom refered to as mealie-rice, it's kinda like pap made with rice.
    The word Porridge we use to refer to another kind of pap that is smooth thick and liquidy sometimes it comes in flavors it's essentially a cereal.

      Yeah it's also a little sensitive to the cook ie who's making it, because unlike rice or mealie-rice/grits that you just essentially boil to a certain point and it'll come out the same in the end, pap is very process dependent. The water maize meal ratio and especially the utensil and "stirring style" all yield slitly different tastes and textures, this is why we don't usually buy it, I'm a grown @$$ man and I never had store bought pap in my life, we all eat home made.
      (A) however is "impuphu" maize meal that the pap you had with the Stew was made with, it comes in many brands but 'THEY ARE ALL THE SAME' don't believe the Megacorps they are all liers 😔😂🤫🤭, @ ours we only use Spar branded maize meal it strikes a nice balance between price and quality and tastes great.
      There is no right or wrong pap, just your pap, that your kids will grow up eating and that will inform what pap, is the Price family's, so all this to say don't stress don't get caught up in the terminologies and the too many brands, (A) is what pap is made with, and you are gonna have to experiment to figure out 'youre pap' that you like.

    1. We use Maize meal (A) to cook both Pap and Porridge (never for Fish)
    i.e
    *use less Maize meal and more water for porridge
    *Use more Maize meal for Pap (cook till you get thick rubbery consistancy)
    2. We use Flour to fry Fish
