How slow do you want to sail?

As slow as possible! No need to sail fast when in paradise! ❤️⛵️⛵️❤️

It looks like you are using a softwood plywood, so not rot resistant. So I hope you have given all the interior surfaces a good sealing coat of epoxy. Hardwood is better, but in time will still rot, especially in hot humid climates.
Every enclosed space should have two vents , say 10cm dia, to allow a through flow of ventilation.
And the very worse thing you can do is fill with two part foam, which isn’t waterproof.
Don’t ask me how I know!

Yes, we have covered the interiour rather well and somehow have had little problems of moist inside. The books and bedsheets were all dry. Maybe due to the way the hatches is made? We have heard about people coming back to boats being total green inside.
