  • I don't really like coffee, but every now and then I try some. I normally just use my instant expresso powder, because I don't have a machine. Maybe I would like coffee more if I had nice machine to brew it. Maybe? Well, if I'm having an expresso. I need a biscotti to have with it. Today, I whipped up some cranberry and pine nut biscotti and I just loved it with that cup of expresso. I would dunk it expresso and bite into that very crispy cookie. A nice tang from the cranberry, and the pine nuts are plentiful enough that you can taste them. Just make it.

    Preheat the oven to 350°. Toast 1/2 cup pine nuts for 10 minutes.
    In a medium bowl, beat 1/2 cup brown sugar and 1 egg until light and foamy. Then, add in 1 cup flour, 1 teaspoon allspice and 1/2 teaspoon baking powder. Mix until it has almost come together and then toss in the pine nuts and 1/2 cup dried cranberries. Finish mixing until everything is well distributed. Roll into a log about 16 inches long and bake for 25 minutes. Allow it to cool for a few minutes and then slice it into 1/2 inch slice, on the diagonal. Place them on the same cookie sheet and bake for 10 minutes. Remove from the oven and flip each biscotti over and bake for another 10 minutes. When done, allow them to cool before serving them.
