You are partially correct. S (Stereo) means both left and right audio channels. Unless you have a more modern intercom or audio panel, your audio will only be one cannel (mono). If your headset is set in Stereo mode, but the aircraft is only giving out mono you will only hear audio in the left side as there is no Right channel being provided by the aircraft. When you set to Mono, it takes the Left channel (the mono channel) and sends it to both left and right speakers.
Hi Quintin. Believe it or not, my dad actually told me the same thing only last week when he saw this video. So you are 100% correct. Thanks for letting me know.
i fly twin otters daily and use the same headset works great, not as good as the lightspeed or bose but 375$ cdn delivered in less than a week is great, seems very durable and reminds me of the david clark noise cancelling. bose and lightspeed do break and lightspeed has some issues with warranty so we will see what happens long term. this is collected info from over 70 pilots over many years.
has anyone had the problem of high feedback and the microphone not working very well? I love the noise cancelling and would like to get it working correctly

Nice to know they are being used commercially too. Like you said not as good as the Bose or Lightspeed but phenomanal for the price.
Hi mate, would you recommend the UFQ A28 Bluetooth version?
I haven't used the Bluetooth version yet, so I really can't say

Could be the radio, or settings. Mine worked in a few different aircraft without any issues. Else maybe you just got a dud.
