Dry aging to remove moisture then brining to remove even more then smoking, which is normally done cold to only impart flavor not cook it, is either going to be awesome or shoe leather. I vote to try it. I am now extremely curious it never occurred to me to brine something dry aged.
SUGGESTION - Can you look into typical non-grilled items on the grill? I have had good luck with Carnitas started on the grill with smoke, and finished in the pressure cooker. Can you look into some items like texas chili, non-texas chili, Chili Verde and similar items. Think of things that can be a hybrid of grill and non-grill. Also - please go into the bacon/sauerkraut. My german heritage has sauerkraut with caraway (not a fan) - but I am sure that bacon can make anything better. EDIT - I also have done a nice smoked meatloaf - amazing stuff!!

Whisky is the right word for Scottish whiskies, sometimes called Scotch outside of the UK. I am not 100% on my information here but happy to learn and/or share the love.
I usually do differentiate between scotch and other whiskies bu dropping the “e” as well. however you can just type it the all encompassing way, whisk(e)y

Nooooo. In the EU colorozo salt is 0.6% nitrite. The Pitmaster even uses too much colorozo salt in this recipe according to EU guidelines. It should be about 40% EU colorozo salt and 60% regular salt. So he's using a little over 2 times too much colorozo salt in this video.

Homemade bacon is the best. Now try dry aging a whole smoked pork belly. I’ve done it with the dry aging bags and it is excellent! Dry aged bacon mmmmmm.

I believe it's very similar to what the States call apple butter. It's basically extremely concentrated apple juice.

It's called Kicap Manis. You Will be able to find it in an Asian grocer. It is a thickened and slightly sweet type of soy sauce.
