I have a aunt from Germany, she told me to soak the meat in some apple cider vinegar for about ten minutes it takes the gaminess out of the meat. Dove tacos, can't beat them. Great video with that family.

Well....Ive been working with him and we are just a few weeks away from the Dove Season Opener!! OH I cant wait. Time for some poppers and then if I get enough....this recipe looks good as well! ...and then comes quail season!!! Cant wait.

Awesome video! Nothing like a good Discada and family. Unfortunately my six doves I harvested won’t make enough for a taco. This is my third year hunting dove First year I made the poppers. Second year I made al pastor(adobo marinated) dove tacos, this year I grilled them whole and used a Nashville Hot Chicken seasoning. I’m going to try to get some guys together for the second part of the season so that I can try Discada.
That looked delicious! So discada has a bunch of spices marinated on the meat. Composed of dried chili’s and spices mixed in with chorizo. The base is bacon and onions you can even make it a surf and turf add shrimp the possibilities of what you can put in a discada are endless. I’m sure if your tried the true discada flavors you would love it! Good stuff tho! 👌🏽

Looks good, probably tastes great. Just an FYI though: “discada” is the type of cooking you’re doing. The top part of the device is called a “disco” (dees coh) where you make the discada.
That’s not a real discada. We use the old ones off farm plows. If you find one you need to weld the hole in the middle shut and weld handles on it. Same concept but I think you bought a wok not a disco. You should come to a real New Mexico mantanza. Pretty cool watching the whole process and seeing the way we cook and butcher pigs. It’s a traditional way of feeding our small communities during the winter.

WHITEBONE CREATIONS HUNTING rust is part of the flavor haha just kidding. They get seasoned like a good cast iron skillet. Once well seasoned and taken care of no rust to be found. Almost every hunt camp in NM will have a disc ready to cook up some heart and liver. Keep up the great videos 🤙
