Everything you said is true but that is how people actually fight in real life. Well, if you are a boxer, Thai boxer, etc the fighting is a bit better (but not by much) otherwise it just scrappy. Hollywood just makes it better when they use choreography.
Check out a Coronation Street character called Nathan Harding. He's a far more convincing hardman than Kevin and a far better fighter. The fight choreography in his scenes actually looks real too so I reckon his actor knows how to box.
