A lot of the "healthy" desert stuff is rooted in diet culture, which often encourages people to feel shame and guilt about eating foods that are not as "healthy" because they don't want to be fat or gain weight. And quite frankly, diet culture often encourages people to feel shame and guilt for even eating healthy food like fruit or bread just because they have carbs because "carbs make you fat" bullshit. Like, diet culture is a breeding ground for unhealthy relationships with food and body image, and diet culture even goes so far as to contribute to actual full-blown eating disorders like orthorexia, anorexia, bulimia, and even binge eating disorder.

BIG oatmeal person here: the slimey/weird texture usually comes from overblending the oats; try to not let it sit for a long time in liquid (it starts soaking it up) and blend until just smooth! hope this can help!
Tip for anyone using natural peanut butter for PERFECT consistency. First, always store it upside down in the pantry for a day or two when you first buy it, this lets the oil incorporate on its own. Then when you open it for the first time give it a good stir and then again, upside down but now store in the refridgerator. Whenever you need it, just bring it out for a few minutes and it will be perfectly incorporated and smooth everytime. Just saved your life. You're welcome.

I’ve made baked oatmeal, but I’ve never blended the oats. I thought it was strange the oats were blended. Try it by blending the other ingredients and then mixing the oats in. I think it will be a way better texture!

I never blend my baked oats,I mix everything in a bowl and leave it in the fridge overnight and bake in my airfryer for 15mins at 180. I also put cauliflower rice in sometimes,you can’t taste the cauliflower rice.

I hate oatmeal but love baked oatmeal. I have it everyday. What I learned to make sure it's not gummy is I only use about 40 grams of banana and I also add a scoop of protein powder. More cake texture now! Try again with these adjustments. you'll love it. So many different flavor variations as well

I just made the Banana Chocolate Chip Brownies and they are delicious! It was super easy to make and the ingredient list is really short and simple, I would highly recommend. I am not sure what about it is "healthy" though. Its about 300 calories (if cut into 8 pieces) a regular brownie is the exact same amount. Maybe the fact that they were able to incorporate fruit into it is what they meant by healthy. On the bright side It's dairy free and gluten free, so that's nice for all the people with intolerances
I accidentally overbaked, baked oats and it was life changing, they had the cake consistency and it tasted so good. If you want you can even break it up into chunks and have it with milk and it is amazing
For a more cakey texture for the baked oats leave out the bananas. My full proof recipe that I have for breakfast or dessert: So I do 3/4 cup oats, a few dates or maple syrup, vanilla extract, 3/4 tsp baking powder, add enough milk (any kind of milk) to just cover the oats. Add a tsp of cocao powder to make it chocolate. Blend then bake at 180 for 15-20 min. I like to serve it with custard or i make a sauce with some vanilla protein powder and milk or a chocolate sauce with peanut butter, dates, 1 tsp cacao powder and milk blended.

That recipe seems like it was for people who had weight loss surgery. Everything has to be blended until the stomach is completely healed so it doesn't get stuck.
I make a healthy berry cobbler all the time that's super good. I take the berries and I cook them on the stove top 1st with about 1 tbsp of cornstarch. I then taste them to see how much sugar to add because often times they just need 1 or 2 tablespoons, if they need a bit of acid, then add a dash of orange juice. Then when I make the toping, I don't measure, but I use about 1 cup of oats for an 8x8 pan, then I add 1/4 sugar, 1 tsp cinnamon and pour in about 1/4 cup of olive oil. Mix it all together, add the berries and then top with the oats. It's super delicious, doesn't have a lot of added sugar and olive oil is good for you.
Hey! Idk if you'll see this, the baked oats turned out the way they did coz there's no butter/oil, no I'd recommend you either keep the pb and add 1-2 tbsp of applesauce or 1 tbsp butter or oil. With butter or oil, i leave the pb for toppings coz I find that nut butters don't allow cakey stuff to rise ✌☺
I tried the baked oatmeal because ive had CRAZY chocolate cravings lately. It wasn't bad.. but, like you said, it was gummy. Maybe adding an egg would improve it??
Bananas are great for treats like these. I've made simple pancakes and cookies with them, and while they do come out a bit dense and spongey instead of fluffy, and they look pretty terrible, they taste SOOOO good. And they're good for you!

You can take brownies out easier if you put parchment paper in the pan before you bake it. Then when it is done, you can pick up the parchment paper and then slice it. Just to make it easier.

Just finished watching the first and started the second and I have to say I FEEL u on wasting expensive ingredients bc I see so many recipes that as a baker I’m like there’s no way that works so at least I know but I hate when ppl give unreal expectations, whether it’s decent or not, we all know it isn’t gonna taste like the real thing so when ppl say that it sets ppl up for disappointment. I think I might have to make the banana chocolate chip brownies (which honestly doesn't sound appetizing - brownies and bananas??), but based on your family's reaction, I think I will! The chickpea blondies didn't even look like they had the texture of blondies. I've made a very similar recipe that wasn't baked and you eat it like edible cookie dough (with a chickpea and peanut butter combo) that is INSANELY delish!! So, maybe your batter would have been better when eaten raw?? Anyways, loved this video!!

To get the chickpea flavor out beforehand, wash them really well then let them soak in water with lemon juice for 20 min :)

FWIW, ramekins are all oven safe. They're made for things like crème brulee - which goes under the broiler in your oven.

Sunflower seed butter is my favorite alternative to peanut butter. If you can have other nuts though many people use almond butter or cashew butter.

Bananas are great for treats like these. I've made simple pancakes and cookies with them, and while they do come out a bit dense and spongey instead of fluffy, and they look pretty terrible, they taste SOOOO good. And they're good for you!

For the baked oats, I feel like without an egg to bind the ingredients together it is really difficult to get the cake like consistency (which I guess is what you were going for)

You can take brownies out easier if you put parchment paper in the pan before you bake it. Then when it is done, you can pick up the parchment paper and then slice it. Just to make it easier.

Just finished watching the first and started the second and I have to say I FEEL u on wasting expensive ingredients bc I see so many recipes that as a baker I’m like there’s no way that works so at least I know but I hate when ppl give unreal expectations, whether it’s decent or not, we all know it isn’t gonna taste like the real thing so when ppl say that it sets ppl up for disappointment. Ppl should be honest imo but some of these aren’t even decent or good as a sub, they just don’t work so thanks for sharing this fr!
Onto the second all I have to say is BAKED OATS ARE LIT. Thats the one healthy dessert I fr think tastes like a real muffin but then again I LOVE oats and pro tip is to add some protein power (whey casein blend is the best for baking) and sprinkle some turbinado on top bc it gives it a realistic feel lol.
On the third the vanilla thing was so funny bc I was about to comment about the first one that you lost me at the lack of vanilla 😂

The chickpea blondies didn't even look like they had the texture of blondies. I've made a very similar recipe that wasn't baked and you eat it like edible cookie dough (with a chickpea and peanut butter combo) that is INSANELY delish!! So, maybe your batter would have been better when eaten raw?? Anyways, loved this video!!

Okay! So I'm obsessed! The only thing I would maybe change later because im not a huge fan of almond butter is add a piece of dark chocolate to the middle or a chocolate and honey drizzle 😁
