The bikes chosen are odd too - they're super clean new-looking bikes, but with cottered cranks, a tech that went away in the 1970s.

It can make very wide turns.
Assuming that the air pressure was the same in all three tires, it looks like most of the weight was on the center tire. It had a much larger contact patch. This suggests that the rear tire had proportionately less traction.
With practice, a rider might learn how to get the rear tire to break free from the road enough to permit a relatively normal turning radius. Shifting as much weight as possible onto the front tire will help.
