Pine causes the build up and you should use a flue cleaner to burn it off every so often. Oak burns hotter and keeps build up off your pipes although more expensive. Please have your flue cleaned properly.

Supplement that with a pair of car mechanic gloves and she'll be comfortable in any weather. The flexibility of mechanic gloves will allow her to handle and use tools. Johnson's, I love the projects and home build. I noticed that you are advertising the Ecoflow with a portable solar panel. The hooks that are given secure it to the travel case. The solar panel can also hook to other things as you suggest. But the travel case is designed to be the frame to hold the panel at the correct angle to the sun. I watched several of your videos looking at your solar build. But your build design has changed at least 3 times. Seems to be the same companies, but upgrading each time. I couldn't spend that kind of money to keep changing out controllers, etc. Plus, I wanted something that I could take parts with me if I go camping for a week or so and then add them back into the system. Thus, I purchased the portable, Ecoflow Delta Pros (2), portable expansion batteries (4) with the 220V hub, and portable 400W solar panels (6). They run my whole house. The only thing I haven't bought yet is the portable, solar generator incase of no sunshine.
You better hurry up you have a snow storm coming you're way next week, install the windows and make the new addition weather proof even cover up with plastic sheeting,good luck.
Recommend you install a snow splitter and bracing above your metal chimney. Snow will freeze and build up over the unheated porch roof and keep the snow from sliding from the upper roof. When the upper roof finally does release, it will shear off the chimney.

Have you considered putting flashing behind that fascia board above the porch roof? I'm concerned snow from the roof above could pile up and work its way back under that overhang. Also, have you considered fully enclosing and sealing that overhang above the porch to keep animals and pests out? Just a thought and hope my suggestions are helpful.

Martin you can make your own chimney sweep device using a burlap sack enough broken bricks to fill the pipe diameter and a rope. I heard your wife mention the lower pipe was pretty coated, watch out for those flue fires they can be scary.
Do you foresee an issue with building the top of the patio cover so close to the bottom of the house’s facia? Wouldn’t there be a problem with inspecting and repairing any damage in the long term.? What about pests, rodents and birds getting in there? Just curious.

One of the best amateur DIY ground-mounted solar systems I've seen is on "Life Uncontained" if you want an adjustable (tilt only) system. Another good one for a fixed mount is on WWoG. If you keep adding panels Marty, you're going to want more battery storage. Then you'll want more inverter power and then you'll forget you're living OFF grid 😄😄 Stay safe and enjoy the rapidly approaching winter!

I like your idea of using the six inch screws on the rafter rails. I've always used hurricane straps but here in West Virginia we might get a little more wind, being we are closer to the Eastern Coast. But by golly I believe them 6" screws would hold better even for us.

You need to buy a sooteater rotery brush. Takes like 5 minutes to clean your stack and I do it through the stove. no need to take the stove pipe off.
